Pasta With Tuna Sauce

Reviewed: May 14, 2008
Delicious & healthy... it didn't taste 'fishy' at all and the acidity of the tomato actually made the tuna taste like chicken! I added canned mushrooms and a pkg of cooked frozen broccoli so I could get a serving of veggies when eating this for dinner. Once I added all that, I needed more 'sauce', so I also poured in a jar of marinara sauce (and tripled the capers, 'cause I love them!) It was really tasty on whole wheat penne sprinkled w/ a little fresh basil and feta cheese!

Cola Onion Pork Chops

Reviewed: May 14, 2008
I followed this recipe exactly, and to be honest I thought after baking these chops for a full 60 mins. they looked mighty dry. Since I can't (for health reasons) eat pork, this review is courtesy of my husband who ate till he nearly popped. The chops were flavorful and tender, so "2 thumbs up!" I have to admit, this was one of the easiest chop recipes I ever prepared, so thumbs up from the cook, too!

This was excellent, I didn't have enough muscle power to really thin out the wrapper. Despite that, it is great! Thanks!

Baked Pork Chops I

Reviewed: May 14, 2008
Followed exactly except used c.o. chic and c.o. onion soups, doubled sauce (didn't need to) and I used 3 thick boneless chops. It was good, maybe a tad too much wine, I used Merryvale chardonnay, which is about $30 a bottle. Maybe depends on the wine so next time I'll half it and then add more to taste. Next time I will also cook the sauce in the same pan in which I fry the chops, and keep seperated until ready to serve. The breading just fell off the chops and you might as well not even bother and just sear them and then cook in the sauce if you do not care to have the breadcrumb coating. Otherwise keep sauce and chops seperated until serving.

Apple-Cranberry Crisp

Reviewed: May 14, 2008
Loved this! But I had to bake it in a larger dish. When I tried to fit it in a pan of the specified size, the apple mixture wouldn't fit.

Pasta with Clam Sauce

Reviewed: May 14, 2008
Very good base recipe. I did make a few changes. I couldn't see using chicken broth when I had clam juice just sitting there. Tossed that in and added a little white wine.

Banana Flip

Reviewed: May 14, 2008
Freezing the bananas is a great way to make this drink colder. Using ice just dilutes it and it looses flavor. I freeze my banana's in chunks and drop them in the blender. Nice frozen drink!

Slow Cooker Bean Casserole AKA Sweet Chili

Reviewed: May 14, 2008
Made this for supper tonight. Even with the addition of chopped onion, and a few spices, this was way too sweet for our liking. Not what I would call chili..won't be making this again.

Homemade Yummy Fudge

Reviewed: May 14, 2008
This recipe was great. I made it for a co-worker's going away party and everyone loved it. The only reason I give it four stars instead of five is because it is very sweet... at least for me. As far as preparing the recipe though, I had no trouble as a beginner. Also, one thing to keep in mind is that I could still taste the cream cheese in the fudge after it was made. The cream cheese was not a strong flavor but it was still there.

Insalata Caprese I

Reviewed: May 14, 2008
Very good salad. I only rated a 4 because I changed it up a bit by adding a clove of minced fresh garlic and making the dressing using 3 parts extra virgin olive oil to 1 part of the balsamic vinegar. 1/2 balsamic and 1/2 oil makes it very tart and overpowering. Make sure the balsamic is the best you can buy, the older the better, the more syrupy it is, the better. Trader Joe's sells a very nice aged balsamic for less than $10 a bottle.
