Baked Zucchini Chips

Reviewed: Nov. 25, 2009
So easy and no fat......instead of black pepper I used Cayenne pepper for more zing, as some reviewers thought it was bland. I dipped them in cocktail sauce...better than a restaurant. I also used the whole egg rather than just the white...definitley will make this weekly...can't wait to try it on the grandkids. I think they will eat veggies this way.

Gourmet Sweet Potato Classic

Reviewed: Nov. 25, 2009
I used 8 small/medium sized sweet potatoes, which I think came out to about 4-5 cups after mashing. I still used the same recommended amounts of sugar, etc... and this dish was still quite sweet. I added extra pecans for the topping, and also added extra pumpkin pie spices. Even though I would have preferred it to be a little less sweet... and due to my spice additions, it tasted more like pecan pumpkin pie than sweet potatoes... it was the hit of my pal's Friendsgiving Potluck party.

Aunt Carol's Apple Pie

Reviewed: Nov. 17, 2009
I have not made an apple pie in years but decided to do so today because I wanted to use up some McIntosh apples before they went bad. I previously used my mother's apple pie recipe, which wasn't great (not an Italian specialty-smile). OMG!!! When I cut into this pie, I couldn't believe it! Could not believe that I made this pie! I used the Pillsbury Refrigerated Rolled Pie Crust (delicious) and followed the recipe to a near "t" with the following changes: I added 1/2 tsp of fresh grated nutmeg and 1 tsp of vanilla to the apple mixture, I baked the pie at 450 degrees for 15 minutes then 350 degrees for 55 minutes. Pie came out PERFECTLY!!!! Not too sweet, not gooey, not too wet or too dry, perfect mixture of sweet and spicy, tender & tasty apples, perfect crust! Absolutely wonderful! Can't wait for my dear husband to taste this tonight! Will definitely be making this pie again and again and again!!!

My only complaint with the recipe was that it didn't say why type of cheddar to use. I use sharp or extra sharp and it had a good flavor. Will definitely make again

Lentil Soup

I thought this was just ok....followed the recipe exactly. I should have used chicken or beef broth instead of water for more flavor. I did use the granules but I don't think it helped much.

Oven Fried Chicken IV

Reviewed: Nov. 4, 2009
Meh, not bad. I would never mistake it for fried chicken, though. I mixed the spices and some extra ones into the sour cream, and used rosemary flavored potato chips instead of cornflakes. The flavor was good, but as usual with baked chicken pieces (I used only drums with the skin removed) all the flavor was on the outside - leaving most of the inside meat kinda blah. I also ran into the problem with blood from the bones looking kinda black and unappetizing... but there was a trick somewhere in the comments to remedy that. I might try this recipe again with breast tenders, since the pieces would be small (more outside flavor) and the sour cream really keeps the meat nice and moist...

Artichoke Chicken

Reviewed: Oct. 27, 2009
This was really great. I was hesitant at first because I don't usually cook with mayo. I used half mayo and half sour cream like others suggested. I also add lots of black pepper, paprika and granulated garlic to the mix. I seasoned the chicken before topping with the artichoke mixture. I served this over mashed potatoes. The hubby loved it! Will definitely make again.

Fudgy Brownies II

Reviewed: Sep. 9, 2009
Delicious fudgy yummy. I wanted something baked and chocolate that didn't need milk in the recipe. They also took more like 35-40 minutes in the oven, not 25. Only change I made was using two pieces of baking chocolate, 'cuz I only had two, and used cocoa powder and applesauce to make up the other two pieces. Had to eat these with plain water, but they were so good it didn't matter.

Fish Tacos with Honey-Cumin Cilantro Slaw and Chipotle Mayo

Reviewed: Aug. 4, 2009
Next time I won't bread the fish I'll just saute it after marinating mostly because to me crunchy fish isn't essential though for some people it was what they enjoyed most. Also I thought the honey/cumin brush on after wasn't a neccessary step either as the cilantro/chipotle/slaw kind of overpowered that taste. Very delicious recipe however and I would recommend it highly to anyone but also recommend that they make it as-written the first time and decide for themselves.

This chicken recipe is excellent....I used corn bread stuffing to bread it, otherwise I followed the recipe exactly......the dijon mustard gave a nice spice to it! I will definitely make this again! Cook it only one hour if you want it to be a little moist. Thank you Monica!

This cake was very easy to make so I would definitely make it again. Although it was not the best chocolate cake I ever had it was tasty. I sprayed the layer pans prior to adding the batter so they came out very easily and cleanly.

Jen's Heavenly Egg Salad

Reviewed: May 15, 2009
This was super-quick! I doubled the dijon and omitted the prepared mustard. Also used red onion (all I had). I agree that the lemon made the mixture more watery than the chunky, dry egg salad I'm used to, but I really, really like it. Great job, Jen.

Really good and as the author notes it's a great side with soups and stews especially but anytime you want a nice bread side to go with a side and main dish. As one person noted, really good with beans or chili ON it as well.
