FABULOUS!!!!!! I made this for New Years day (along with Lobster Tails) and my family raved over it. It was better than any prime rib we have had in a restaurant. I made a few slight modifications....I grow herbs to I made a paste with fresh garlic, rosemary, tyme, butter, olive oil, salt and pepper. I made slits in the meat and stuffed with thick garlic slices into the slits and then I rubbed the paste all over the meat. The roast was over $50.00 for I bought a digital meat thermometer to be certain that it was cooked to perfection. It worked perfectly and yielded the perfect doneness of the meat! I'm an advanced cook, but this recipe is simple enough for even a beginner!
