Pecan Chicken Breasts Stuffed with Cream Cheese and Broccoli

Reviewed: Nov. 13, 2007
This was delicious!! I didn't have bread crumbs, I think it would have made a big difference. I omitted the pimentos, not my favorite. I added some crushed red pepper to the cheese mixture for a little punch. Also I should have finely chopped my pecans. I skipped the pan frying and just baked it. All in all, my boyfriend and I loved it!

Chicken Enchilada Casserole I

Reviewed: Nov. 7, 2007
We loved this recipe..I made it for my boyfriend. He wanted it again the following weekend! I left out the green chiles since the tomatoes had chiles. I also omitted the chicken broth. I was not sure if cheese spread was cream cheese? I used Mexican shredded cheese...it was great!!

Fudge Brownies I

They are fantastic.I was looking for something quick and easy, this fits the bill for sure.I only used 3 eggs and I cut back on the sugar to 1 3/4 cups...I know its not much but it made them not sooo sweet. They are very soft on the inside and cooking for 33 minutes they came out purfect! I will save this recipe and make them again for sure...

Banana Muffins II

Reviewed: May 31, 2007
This recipes make the most delicious and moist muffins I have ever tasted. We are big muffin fans and I have tried several recipes and this is the best thus far.I added some honey and some cinnamon and some vanilla like some other reviews had said...and that just added more flavor, not that they need much doctor-ing! I have made these 2 times in the past week, the 1st was to try it and the 2nd time was to use up the bananas AND my family asked for more!!! 5 stars all the way.

Great recipe and was an instant hit. One major note is to use pure Portuguese chourico, not spanish or mexican, for a truly delicious flavor!

Baked Beans II

This is a winner. Made it for the 4th of July cookout and everyone raved how great it was. My son, who has hated every baked bean recipe I've made to date, actually complimented me on them and stated that it was a keeper for all future cookouts.

Out of all the recipes I've seen on the internet, yours was the only true one that had the black olives which is always used in this dish in the Azores. Thank you.

Best Spinach Dip Ever

Reviewed: Dec. 24, 2004
This was awesome! First time I've ever made spinach dip and everyone at the party raved about it and some wanted the recipe. I used a whole box of spinach, the Knorr veg soup mix,and omitted the water chestnuts. I also used the recipe for the Portuguese Sweet Bread like another reviewer on this site suggested. Superb!

Boiling Water Pie Crust

Reviewed: Jan. 25, 2004
This crust was way too crumbly. After refrigerating the dough, I had to let it warm up to even try to roll it out. I'm wondering why the recipe says to refrigerate at all, since you have to let it warm up. I won't be using this recipe again.

Chicken Parmigiana

Reviewed: Jan. 12, 2004
Simply delicious! The only change I would make is use a larger jar of sauce, since we like more sauce. I took the suggestion of others on this site and double breaded the chicken. I cut my chicken into strips. To save time, I prepared mine on top of the stove on simmer. Yummy!
