Monkey Bread I

Delicious!!!!! Definitely use a bundt pan. DO NOT stir the margarine/brown sugar mixture once it comes to a boil - get it to a full rolling boil and then time it for a minute, for those who are having a problem with it separating. Will be making this for Christmas breakfast every year at the request of the family. And for the skeptics out there, you'd never know it had "canned" biscuits in it. :)

Tater Tot Casserole

Flavors are wonderful, however we all agreed that proportion of meat to tater tots was a little high. I think another time I will use half the meat and add some veggies in place of it. Reminds me of a creamy shepherd's pie.

Tangy Barbecue Sauce

This is good! I adapted it according to reviews saying it was too sweet (used 1/2 cup brown sugar instead of 2/3) and then added a tsp of onion powder and a couple shakes of hot sauce (per our tastes). Don't know that I will necessarily use it instead of buying the store stuff, but I can definitely NOT panic anymore when we run out! Can't wait for grill season to come back around so I can use it then - it caramelizes beautifully!

Quick and Easy Brownies

This is excellent. I made a batch for my friends' kids for the huge Thanksgiving party we're having and had to make a second batch right away because the first batch was already gone. I wasn't sure I liked the taste at first but the more I ate, the more I loved it! I'll definitely make this again. It was so easy and fast.

Banana Split Bread

Even better the second day. I do have to confess to using milk chocolate chips (prefer them) and we added 1/2 cup chopped maraschino cherries (to make it more "banana split" like). I actually wasn't too enamored with it the first day but this morning the flavors were fabulous! Will make again.

Fast and Friendly Meatballs

Very good! I made these using a 20 oz. pkg. of Italian seasoned ground turkey (didn't have any plain on hand). Want to try using plain ground turkey too. Very good gently simmered in spaghetti sauce after baking. These hold together beautifully!! This will definitely go into our regular meal rotation.

Candied Acorn Squash

YUM! I only had a small acorn squash, so I made half the butter/brown sugar mixture (I personally would use the full amount with a larger squash - seems more like a "treat" dish to me and I have to admit to enjoying the "yummies" in the middle!) and cut the cooking time accordingly. Very good - my 8yo (my adventurous eater) enjoyed the other half with me. Will definitely make it again. Sprinkled with cinnamon before cooking as well. It was fun to eat right out of the skin with the rest of our meal.

Stuffed Pepper Soup IV

Very good with a few changes. I used beef broth, two cans, and cooked the rice in the soup, so I had to add about 4 cups of water as well. I will halve the amount of rice another time but still increase the liquid considerably.

123 Green Tea Ice Cream

Cake Mix Cookies IV

Delicious and amazingly versatile. Also, unlike a lot of other cake mix cookies I've tried, they don't have that distinctive "cake mix" taste that so many have, as well as the dryer texture. We will definitely make again with the many possible variations!

Quick and Easy Chicken Noodle Soup

I made several adjustments to this recipes, hence the 4 star rating. I used an entire 48oz box of Swanson's MSG free low sodium chicken broth, and 2 Herb-ox msg free chicken boullion and 4 cups of water. I sauted the onions, celery, and carrots in some olive oil rather than the butter. I used a rotisserie chicken and picked off all the meat (except the breasts, I saved them for another meal this week) and just dumped that into the pot with the veggies and the broth. I let it come to a boil then let it simmer for about an hour. I didn't have whole bay leaves so I used someone else's tip from A/R and emptied a tea bag and added my bay leaf pieces and let that stew with everything. I removed it right before serving. I used egg noodles and cooked them in a seperate pot so they wouldn't get all soggy. I can't wait for leftovers for lunch and dinner!! Even the sick DBF liked it, though he only ate a few bites he said it was good. I didn't add any other spices except for the bay leaves. No salt, or pepper or the other spices the recipe called for. Didn't want DBF to not eat it because it was too spiced up.

Garlic Vegetable Soup

This is delicious! I use an onion in place of the cabbage (dh doesn't like cabbage, however it would be wonderful with the cabbage) and sauteed the garlic the last minute with the other veggies (we like a "sweet" garlic flavor rather than strong), pureed one of the cans of tomatoes, used homemade veggie stock instead of the chicken broth, and used whole wheat macaroni. Very good, will definitely make again.

Basic Pasta

I tried to make this recipe last night. I followed the directions as well as some recommendations. I doubled the recipe, used half bread flour and half all purpose,and added some olive oil. I have never had fresh pasta, that I can recall so I'm not sure what this should taste like, DBF is Italian and comes from a family that knows pasta. He said it was off somehow. After I mixed it in my Kitchen Aid mixer, I kneaded it and let it rest for about and hour. It was a little tedious to roll out with a rolling pin, but I think I got it fairly thin. I let the noodles dry for a few minutes before I cooked them. They ended up coming out rather mushy and slimy. I think I may have over cooked them, I really don't know. The sauce I made with it was really good, but the pasta wasn't what I expected. I don't know what I did wrong. Perhaps I will make this again using semolina flour and only boil the pasta for a minute or 2 not the 3 or 4 I did. This was a good recipe to start with and would recommend it to someone who is just starting to make pasta, it seems like it is a good jumping off point.

Chocolate Cream Pie I

I made this recipe twice. The first one looked really nice, but I underbaked the pie shell so it was a little off. The filling though was tasty, set up pretty nice. The second one I overbaked the crust so once again it was a little off, but the filling was just as good. It was served with homemade whipped cream both times.

Cheddar Garlic Biscuits

OH MY GOODNESS!!! I made these biscuits on a whim last night to go along with homemade Cobb salads. I reduced the servings to 7 and added about a teaspoon or so of parsley to the mix. My boyfriend asked what they were when they came out of the oven because they looked really lumpy and strange. But after he tasted one he was instantly hooked. He did say they were a little buttery, but that is because I used too much melted butter when they came out of the oven. This recipe is now my go to recipe for biscuits.
