Stuffed Butternut Squash

I thought this was awsome! I scooped out the cooked squash and mixed in with the rice mixture and served it back in the shell. Fantastic!!

Addictive Sweet Potato Burritos

I love this idea- sweet potatoes in a burrito sounds weird at first, but it is SO delicious. I make it with black beans- personal preference. Sometimes, instead of rolling these up into flour tortillas, I'll use corn tortillas and make little pies with them. I mash the sweet potatoes, then I layer one corn tortilla with sweet potato, black beans and cheese, put another tortilla on top and layer it again. I then bake them at 425 for 7-8 mins until they're a bit crispy. And either way, I always serve this with fresh avocado.

Cracked Sugar Cookies I

This is a very tasty cookie and very easy to make. I did not, however, like the texture of the dough or the cookie. It was very dry and hard to roll into balls. Not only that but putting in the oven just until the cookie started to crack yielded a cookie that would fall apart if handled normally. My husband rates cookies by their 'dunkability' in milk - this cookie failed miserably as it fell apart just holding it above the cup!
