Pasta Shells with Portobello Mushrooms and Asparagus in Boursin Sauce

I've seen Boursin cheese in my local grocery store for $6.99 so I can see why people say it's pricey. If you have one near you I recommend going to Trader Joe's. Their Boursin is only around $3 and they usually have some reasonably priced portobellos and asparagus to go with it.

Creamy Mushroom Risotto

DELICIOUS. This is a pretty time intensive recipe but easy to follow, and simple in terms of ingredients. Maybe it's not a traditional risotto but when you have 2 toddlers running wild around you, a simpler, easier recipe that results in a delicious end result is a weclome thing no matter what some naysayers might have to say. I will definitely be making this again. I made it easier by cutting corners like heating my water and stock in a microwaveable measuring cup. I mixed in some asiago cheese at the end and it gave it a great flavor. Anyone who wants a flavorful, satisfying side should definitely try this recipe. I bet you could make this a main course by mixing in a boat load of veggies in the beginning, or using some grilled chicken or shrimp.

Ricotta Cheese Pancakes

I give this one three stars for a few reasons. My first attempt resulted in pancakes that I probably would not eat again. They were not really cooked through, and a little mushy. Following the recipe, I found the batter so thick that I couldn't even mix it well so I added about a quarter cup of skim milk. This made my batter a great consistency but may have been the reason for the overall mushiness. I am also not a huge one for exact measurements, which hindsight has shown me is probably necessary for this recipe. I will try this again because the idea is still so good to me and I think I can get it right. I normally wouldn't down a recipe that failed because of user error but I still gave this one 3 stars because I believe that it needs to be tweaked somehow, just not the way I tweaked it this time.

Gravy Baked Pork Chops

This was extremely easy to make and it was a big hit with my husband and my kids. It did not take long at all to get this in the oven, and when I had about 5 minutes to go in there, I took it out and topped it with french fried onions. That was a delightful flavor and texture for this dish!

Quiche

Super easy to prepare and it comes out so fluffy and delicious! It was like a perfect combination of cheese and egg in every bite. Even my husband who normally sticks his nose up at quiche admitted that he liked it. I used pepperoni instead of ham and while it was good, I'd love to try it with some diced ham next time. This is a fast, delicious recipe, perfect for breakfast, lunch or dinner!

Basic Fondue

Birthday Bones

These were super easy! I own a book on homemade dog biscuits but most of the recipes call for bone meal and desiccated liver, needless to say i never have those on hand. So this was a quick alternative. Try substituting low sodium chicken or beef broth instead of the milk, especially for those dogs that are sensitive to dairy.

Simple Turkey Chili

Great recipe! Here are the changes I made. I added about a cup of diced red and yellow bell peppers and a jalapeno when I was cooking the onion. I also omitted the cumin and oregano. I used 2 cans of diced tomatoes and a small can of tomato sauce because that is what I had on hand. I only used half a can of beans, based on personal taste, and left them whole. Lastly I used beer instead of the water. I started with a cup, but the chili got very thick while simmering, and I added the rest of the bottle.

Baked Buffalo Wings

I will never fry buffalo wings again after realizing I can make such crispy delicious wings in the oven. I made some changes to the recipe though. I omitted the garlic powder and added paprika. To prevent wasting spices and for more flavor I seasoned the chicken directly, and then added to the bag of plain flour. I kept them in the bag instead of transfering them to a baking sheet. They absorbed more of the coating this way. Make sure you keep the wings in the flour for at least an hour though, its a must. I also didn't add the sauce until after baking, and I don't think the wings would've came out as crispy, or crispy at all if i did. I used a much higher ratio of hot sauce to butter because I love the heat.

Buttermilk Syrup

I just finished making this syrup and tried it on top of a blondie with vanilla ice cream, applebees style. It was delicious! I'm going to try the rest of it on some buttermilk pancakes tomorrow. I used half white sugar and half brown. It gave the syrup a nicer color. It is on the sweet side, but that's what I expected with syrup. I'll probably cut back to about 1 cup of sugar next time, but it is fantastic the way it is.

Rib Eye Steaks with a Soy and Ginger Marinade

I made this marinade for some new york strips I had left over from a value pack. We wanted a different spin on them since we just had plain steak and mashed potatoes the night before. I halved the recipe, and omitted hesesame oil since I didn't have any on hand. I marinated for about an hour and a half. While the steaks were on the grill i sauteed up some onions and garlic, and then added the leftover marinade, brought to a boil to kill the bacteria, and reduced. Then I added about 1/2 c pineapple juice. I spooned about a tablespoon of the sauce over the steaks and they were perfect. This tasted very much like the asian marinated new york strip from pf changs. Definite must try.

Blonde Brownies I

Perfect blondie recipes. Very moist and chewy. The only change i made was instead of milk chocolate chips and walnuts, i added white chocolate chips and macadamia nuts. I mixed them both in with the flour mixture so they wouldn't sink to the bottom. You won't be disappointed with this recipe!

Restaurant-Style Buffalo Chicken Wings

ABSOLUTELY THE BEST BUFFALO WING RECIPE! Letting then sit in the flour for 1-2 hours helps them get a nice crispy coating when frying. Try not to skip this step! And the sauce is spot on, but if you like a little extra kick like i do, just increase the ratio of hot sauce to butter. I also make these with chicken breast tenders. AWESOME RECIPE! thanks!!

French Crepes

Good basic recipe. I was making a dessert crepe so I added a little vanilla and it gave it a nice flavor. spread a thin layer of nutella on the crepes, then some fried bananas, and rolled them up, and topped with whipped cream. Delish!

Ladyfingers

i made these and they turned out great! i didn't have a problem with the batter being runny like some users, and i think the trick is to make sure you beat both the egg whites and yolks until very stiff and maybe a touch more flour. They are bland, but thats how ladyfingers are supposed to be. They're great with coffee or in tiramisu though. delish!

Tiramisu II

This is just like the tiramisu you'd find at a restaurant. i experimented with it a few times and here's a few tips. Definetly double the coffee mixture and try using kahlua instead of the rum. and also make sure you are using SOFT lady fingers. for presentation i find it looks better in smaller individual glass serving bowls (or a bowl for two after a romantic dinner). i just line the bowl with ladyfingers around the circumference first. and lastly, make this ahead of time. not only will it save you time on the night of your dinner, but the flavors really come out after it sits in the fridge for a day.

Ricotta Eggplant Rolls

Here's a GLUTEN-FREE version: add a LOT of freshly grated parm or romano cheese to the egg mixture (so that it's thick enough to coat) and skip the breadcrumbs. Go right to the saute pan with the egg-cheese dipped slices. If you want to make it extra special, lay a slice of proscuitto (Italian Ham)on top of the ricotta cheese mixture before you roll it up! Yum!

Mouth-Watering Stuffed Mushrooms

These are AWESOME! Perfect for anyone on a Gluten-Free diet. Easy to prepare and delicious! I used a pastry bag to pipe in the filling. Quick and easy. There was a lot of filling left over which I heated with some heavy cream and served over penne!

Sassy Chicken Enchilada Dip

Awesome! Made this as an appetizer at a Pampered Chef party and it went over very well - 5 people asked for the recipe. Used salsa (drained) in place of canned tomatoes/chiles. Grilled the chicken and put into food processer (after cool) to shred. Served with tortilla chips. Very easy, very good!
