Think about it... It's 3am, everybody is wasted, no pizza joints are open. All hope seems lost for the hungry. But then.. out of seemingly nowhere a delicious smell cuts through the cigarette stained and stale beer laden air like a hot knife into sweet cream butter. You rise to your feet, and in an alcohol induced stupour make your way to the kitchen. And there before you, like a shining beacon of light on a misty morning, sits the object of your drunken salvation: Baked goods. So good. So freakin good. Such is the task of The Drunken Baker. Hero? Saint? Magician? To some, yes. To others, a heathen diety. But in reality... Just a drunk guy who knows how to cook.

Pasta Shells with Portobello Mushrooms and Asparagus in Boursin Sauce

I've seen Boursin cheese in my local grocery store for $6.99 so I can see why people say it's pricey. If you have one near you I recommend going to Trader Joe's. Their Boursin is only around $3 and they usually have some reasonably priced portobellos and asparagus to go with it.

Creamy Mushroom Risotto

DELICIOUS. This is a pretty time intensive recipe but easy to follow, and simple in terms of ingredients. Maybe it's not a traditional risotto but when you have 2 toddlers running wild around you, a simpler, easier recipe that results in a delicious end result is a weclome thing no matter what some naysayers might have to say. I will definitely be making this again. I made it easier by cutting corners like heating my water and stock in a microwaveable measuring cup. I mixed in some asiago cheese at the end and it gave it a great flavor. Anyone who wants a flavorful, satisfying side should definitely try this recipe. I bet you could make this a main course by mixing in a boat load of veggies in the beginning, or using some grilled chicken or shrimp.

Ricotta Cheese Pancakes

I give this one three stars for a few reasons. My first attempt resulted in pancakes that I probably would not eat again. They were not really cooked through, and a little mushy. Following the recipe, I found the batter so thick that I couldn't even mix it well so I added about a quarter cup of skim milk. This made my batter a great consistency but may have been the reason for the overall mushiness. I am also not a huge one for exact measurements, which hindsight has shown me is probably necessary for this recipe. I will try this again because the idea is still so good to me and I think I can get it right. I normally wouldn't down a recipe that failed because of user error but I still gave this one 3 stars because I believe that it needs to be tweaked somehow, just not the way I tweaked it this time.
