Quick Cheeseburger Pie

Pickles were a little strong I ended up running out of swiss so I topped it with cheddar. My kids did not like this, they refused to eat it.

Evin's Indian Apricot Chicken

Why did I wait so long to make this? This is fantastic and came together in about 15 minutes. The flavor is so fresh, light, spicy, sweet and savory with minimal ingredients and effort. I served it on top of couscous (unflavored as this sauce provides all the flavor you need) with a fruit salad as a side. I garnished with a little parsley and WOW! I actually caught myself licking the plate. I honestly can't wait to attack the leftovers. The sauce is very accommodating, so next time I'll experiment with adding some veggies and serve it with some naan. Thanks Evin!

Potato Salmon Patties

These are great. I did change it a little. I boiled 2 large potatoes, then mashed them with a little butter, salt & pepper. Add the other ingredients, omitting the eggs, dry potato flakes, and bread crumbs. Added a little Old Bay seasoning, mixed, shaped into patties, and lightly breaded the outside with Italian seasoned bread crumbs.b Browned in frying with butter. Will be making these often. Served with tartar sauce.

Spinach Quiche

I used fresh spinach and fresh mushrooms, and also added a red bell pepper to the mix. i first sauteed the onions and garlic in a little butter and a touch of olive oil, and then set them aside in a bowl. then i cooked the mushrooms and red bell pepper, and cooked down the spinach. i added that to the bowl and mixed. then added the cheeses. i prepared two pie tins with crusts, spread half of the mixture in each. i used 8 eggs in total, and still only 1 cup of milk. i split that between the pies and it made the perfect amount. otherwise followed recipe as stated. thanks alot!

Pork Roast with Thyme

I used a pork sirloin bone in roast. It turned out great. I did add an apple at the begining for a little sweetness and half a packet of onion soup mix with 1 cup water. Next time I will use a boneless roast and I will double the vinegar sauce. It was definetly a hit with my husband.

Chocolate Chip Pancakes

Very yummy. I thought I might be too chocolately because of the chocolate milk but you don't even know it's in there. I sprinkled them with powdered sugar. I didn't do the bananas and strawberries although I'm sure it's yummy that way. Definately next time.

Lime Chicken Soft Tacos

Yum!!! I used fresh cilantro in place of the oregano...added about 2 Tbsp of it at the end of cooking. I also added about 2 tsp or so of cumin. I thought it gave it a great smoky taste. Will definitely make again!

Outrageous Chocolate Chip Cookies

The only thing I do different iuseing mini semisweet chips and put about 1/3 cup of diced walnuts. They are a five star for sure.

Cheese Soup with Broccoli

very yummy. Sometimes, I add other cheeses along with the velveeta to add a different flavor but the velvetta adds a nice texture. The carrot, onion, and celery really adds a nice overall flavor.

They weren't chocolatety enough for me. Actually kind of boring and like other posts said.. the bottoms were kind of wet. i thought i had burned them but they just browned too quickly on the bottom.

Baked Spinach & Cheese Mashed Potato

Made it as written the first time and it was good. Incorporated several of the suggestions others made, which I've posted as the modified recipe, and it was divine . . . . The entire 11x15 pan was consumed by 10 adults in the course of Thanksgiving dinner along with demands I make it again in the future. DEFINITELY a keeper, Gail - thank you for sharing it.

Coconut Oatmeal Cookies I

Just finished baking these cookies. Changed the recipe a little by adding 3/4 cup white chocolate chips to the dry ingredients. Since the recipe didn't specify what size spoon to use I made them a rounded Tablespoon size, and got 36 cookies in the batch. Smelled wonderful, tasted even better. The recipe instructions could be a little more precise (which is why I only gave this recipe 4 stars) . But the cookies are wonderful , will definately add these to my recipe box to make again.

Greek Penne and Chicken

Really delicious basic recipe. I used no artichokes at all, since my husband wouldn't touch them, but instead added plenty of oregano, 1/2 cup of chicken stock, and 1/2 cup of parmesan to the lemony sauce... then one pat of butter at the very end. It came out light, creamy and delicious, very flavorful without the marinated artichokes. And of course, you can't go wrong with feta, pasta, chicken, and tomatoes! :) A big hit.

Pear Pie II

Great way to use up almost-gone pears. I did use more than the recipe called for-- 5 instead of 3-- simply because that is what I had laying around and they were smallish. It worked beautifully. Used vanilla instead of almond, and it still came out superb. I was nervous about a custard filling being fiddly, but it was a breeze-- great recipe!

The Best Rolled Sugar Cookies

Wish I could give 4 1/2 stars! The taste and texture of these is definitely a 5+... but the dough is soooo gooey, it is a pain to work with even after 3 hours in the fridge. It did get easier as it went, since I got more heavyhanded with flouring the work surface! :) All in all, the awesome taste wins the day!! 5 stars, big hit! *NOTE* I did NOT add extra sugar as some reviewers suggested. Maybe it would have helped the gooeyness? Still, in the end I like the lighter taste with just 1 cup-- especially since I frosted most of them. I suggest if you are frosting them, stick with one cup and use a lot of flour when you roll them out.
