Baked Egg Rolls

Country Apple Dumplings

I made this for a church potluck it was the 1st desert to dissapear, everyone raved about them! I didnt have mountain dew I had Gingerale and did the other half as apple cider 6 OZ each. I also sprinkled pecans on the them, they came out fantastic!

Easy Sugar Cookies

Was informed by my daughter that she needed something for a bake sale at school, at about 7 pm the night before!!!! These were easy to make, and came out beautifully!! I dipped each ball into decorating sugar to make them "prettier". Big hit, and the cookies helped to raise for victims of the tsunami. Tasty!!

Maple-Curry Chicken

Yum Yum Yum! I cooked 2 chicken breasts right in the pan with the peppers & onions and used soy milk (and corn starch to thicken). The butter isn't necessary. Also added cubed sweet potatoes, in fact if you wanted to make this vegetarian, go with sweet potatoes and some chick-peas in lieu of chicken.

Oatmeal Raisin Cookies IV

I just made these to put in the vintage cookie jar my sweetie gave me last week. He sat with a glass of milk and ate 6 in just minutes!!! I took the advice of someone who held the third egg out and added it later---I think that was a big help. This is most definitely a keeper!!! Will make it again and again and again!!!

Chicken Meatballs and Spaghetti

Great recipe! All who ate it loved it. I thought the sauce could have used more diced tomatoes. Also I couldn't find chicken so I used turkey. And I used Italian seasoned breadcrumbs and some Tomato Pesto seasoning instead of the Italian seasoning. Next time I'll use more diced tomatoes. A keeper and will definitely make this one again!

Yum Yum Yum. I make the sauce separately starting with a roux since I use FF half and half. I make the roux with butter, spelt flour, and minced onions and garlic.

Peanut Butter Bars IV

Wait a day, then rate these bars. They were WAY better the next day! Changes made: spelt flour in place of wheat. I also used Skippy Natural Creamy Peanut butter (perhaps a "rounded" cup of it). They are very peanutbuttery; exactly what I was looking for.

Oatmeal Apricot Crisps

Odd as they may be, these we really a hit! These were moist and chewy; the flavors are a great twist on a basic oatmeal cookie. As usual I used a combination of white spelt and whole spelt flours instead of wheat. Following reviewers advice I cut back on the sugar using 3/4 c. white and 1/4 c. brown and replaced an egg with applesauce. Also added cinnamon, nutmeg and vanilla. I forgot to flatten my test batch before they went in the oven but it worked out great so I didn't do it to the rest. I ended up with nearly 48 cookies! These freeze well, they still taste great.

Addictive Sweet Potato Burritos

We love these burritos! My changes: I always used black beans and whole spelt tortillas. YUM! If you're looking for alternative ways to cook with sweet potatoes, try these! tonight! edit: These can have a mushy texture so I came up with a "corn relish" to add to the burrito to add some crunch to it. It's a great addition to these burritos!!! 1/4 c frozen corn, 2-3 TBSP diced minced onion, 3 TBSP diced bell pepper, 1 1/2 TBSP honey, glug of balsamic vinegar, salt & pepper. Combine in a bowl, let sit while you make the burrito filling, then add to burrito before you wrap it up.

Corn Pudding II

Tender Breaded Turkey Cutlets

Not quite sure how I feel about this recipe. Perhaps I put the sour cream on a little too thick, but the bread crumbs wanted to fall off the second side. I even let the cutlets set in the fridge after coating for about 25 min. I also found the coating to be a bit mushy---again, perhaps because I used a bit too much sour cream? I also added a bit more EVOO because I have a slightly large fry pan, and was afraid of burning the coating. I would appreciate any and all feedback given. P.S.--Although this did not come out the way I would have liked, my daughters liked the tanginess of the sour cream. I will make this again, maybe browning and then baking the cutlets.

Dark Chocolate Cake I

I think this cake is amazing, its moist, with just the right amount of chocolate. I followed the recipe but just used two 8 inch cake pans instead of 3 the cake took longer to cook than what was recommended and it came out really high I had to cute some of the tops off or else it wouldnt have fit in my cake caddy. I will use this recipe again
