Mixed Fruit Crisp

Reviewed: Jan. 20, 2007
this turned out decent...The choice of using cortland apples for this was a bad one on my part. Granny smith's would have been much better!! I'd suggest making sure the bananas are layered deep within the crisp as well...they taste funny when they dry out a bit and then are mixed with everything else. With some tweaking, this could be fabulous!

White Chocolate-Cranberry Biscotti

Reviewed: Jan. 20, 2007
mmm. these were devine! doubled the recipe and made thoughtful, homemade christmas gifts for my aunts! Piled high in a nice, clear cookie jar and paired with some gormet or homemade hot cocoa mix, and it became a treat-turned-gift that everyone was impressed by. Fantastic recipe for biscotti!

Kentucky Biscuits

Reviewed: Jan. 18, 2007
Let me make this clear. I don't like bicuits much. Pretty bland and tasteless. But my husband loves biscuits so I relented and tried this recipe. Okay, I eat my words...I LOVE these biscuits!! I was floored by how tasty they were. And everyone is right, knead the dough very little (about 10 times) and they will be oh so tender. Now I have a freezer full so we can have them with almost all our meals. I am converted!!

Chicken Fried Chicken

Reviewed: Jan. 18, 2007
When I saw the recipe called for dry potato flakes as part of the crust, I thought "wha-a-a??", Didn't sound particularly appealing. But it had many good reviews so I tried it anyway, and even was generous with the amount of potato flakes. This dish is wonderful...one of the best fried chicken recipes ever...and there are a million of them out there! Now I cook this all the time....thanks!!!

Hawaiian Wedding Cake II

Wow, this is good! I use a pineapple cake mix rather than vanilla to give it even more flavor. When making the topping, be sure to mix the ingredients well or you will bite into pockets of cream cheese bits. Everyone I served this to asked for the recipe.

Quick Hoppin' John Soup

Reviewed: Jan. 9, 2007
this was absolutely fantastic!! really filling and flavorful! I, like many other reviewers, opted for spicy italian sausage and also added both onions and celery to the mix, which really added a lot of taste and body to the soup. The spicy sausage with this recipe is just a perfect pairing; I'd highly suggest it! And also, Uncle Ben's has a quick long-grain & wild rice that comes in a box w/ seasoning and it's really inexpensive...I noticed people saying they couldn't find this rice with the seasoning, but I'm just telling you all- it's out there!!

Upside-Down Peach Muffins

Reviewed: Jan. 9, 2007
this was a great twist on the standard muffin. the bottoms make these tasty treats tops!! Also, I'd definitely recommend using fresh peaches, not canned. i used canned and the peach slices kind of slid out of their places when turning out of the muffin tin. I think the fresh peaches would have held their form more while cooking, especially if arranged so they're vertical in the muffin tin, not horizontal.

Eggnog Cookies III

Reviewed: Nov. 25, 2006
this recipe was yummy but it needed just a little flare so I took 3/4 cup of confectioner's sugar with 1tsp of nutmeg and mixed about 3-4 tablespoons of eggnog into it to just make it slightly runny. After putting it in a pastry bag with a tiny hole at the end I drizzled it over the cookies then sprinkled red and green sugar over it to give it a festive look. It took a bit for the cookies to dry but it seemed to go faster when I put them in the oven that was barely warm after having it shut off from baking for a while. YUMMY this way!

Cornbread Casserole

I quadrupled this recipe to feed a crowd of 15 people for our Thanksgiving dinner...I expected to have plenty of leftovers, but EVERYONE loved it so much, it was gone very quickly. I did add an entire 8 oz. container of sour cream, but other then that I stuck to the recipe. I will definitely be making this again and again.

MMMMM... Brownies

Reviewed: Oct. 29, 2006
These brownies are seriously the BEST my family has ever had. I doubled the recipe and baked in a 9x13" pan for exactly 30 minutes, and they came out perfect. I made a fudge frosting to ice them with, and let me just say that we were in chocolate heaven....I will definitely make these again and again.

Easy Sugar Cookies

Reviewed: Oct. 20, 2006
Everyone should try these cookies. They are absolutely fabulous! My four sons ate them up within minutes of taking the last pan out of the oven. They actually told me that these are even better then the best chocolate chip cookies they have had. I almost fell over! The only change I made was I added an extra egg and a teaspoon of cinnamon to the batter. I also dipped the tops into cinnamon sugar before baking, and baked them for 7 minutes. They literally melt in your mouth! Thanks for the great recipe!

Really Basic Peanut Butter Cookies

Reviewed: Oct. 16, 2006
I was craving peanut butter cookies last night, but didn't want to go through the fuss of "making cookies", so I decided to try these. Wow, was I surprised! They are the richest, most decadent peanut butter cookies I have ever had. They have almost a fudge-like texture. Definitely satisfied my craving!

Sweet and Gooey Chicken Wings

Reviewed: Oct. 16, 2006
These chicken wings came out very tasty. I tripled the recipe for my family of 6 (my husband and I, and our 4 boys), and they disappeared in a flash. My only complaint is that the sauce bubbled over the sides of my pan while I had the tin foil covering it, and made a huge mess inside my oven! And it wasn't that I used a shallow baking dish either. I wonder if anyone else had this problem?? I would have given these 5 stars if it weren't for the horrific clean up work that I had to do afterwards.

Easy Italian Chicken

Reviewed: Oct. 13, 2006
My family and I thought this chicken was great. I had to alter the seasoning according to what I had. I only had one clove of garlic, so I used that along with a generous amount of salt-free garlic & herb seasoning. I used Goya brand Adobo instead of salt, and cut the red pepper flakes down to 1 and 1/2 teaspoons. I also added some Italian seasoning. It came out juicy, with a wonderful flavor. I think the thing that makes this chicken so good is the method of cooking it, not necessarily the seasoning. It would be great seasoned with anything your family likes. I will definitely use this method again!

Best Chocolate Chip Cookies

Reviewed: Oct. 11, 2006
These cookies are soooo good! I had to use butter flavored Crisco along with 6 teaspoons of water, because I had no butter. I also used milk chocolate chips, and (this may sound strange) added about a teaspoon of pumpkin pie spice, just to see how they would come out. The pumpkin pie spice really adds a wonderful flavor to these cookies, especially if you are adding walnuts, which I did. They came out the perfect texture too. I will definitely be making these again! ****UPDATE: I just made these cookies again and followed the recipe exactly, including using real butter, and they came out even better!! Definitely don't alter this recipe if you want the best cookie you can get!
