Easy Pasta Casserole

I did not have high expectations for this. A sick friend gave me some hamburg and rotini and asked me to make something for her and her husband. I found this recipe, added chopped onions, minced garlic, salt and cumin to the meat. Used 1 jar of Newman's Marinara Sauce, 1 large can of tomato sauce, and one large can of diced tomatoes. I added a container of sliced baby portabello mushrooms. Mixed it all with the cooked pasta, and covered generously with lots of mozzarella. There was plenty because I doubled the recipe, so my husband I got to eat it, too, and so did two of our neighbors! I could not believe how tasty and filling it was. And so easy to fix! This is now on my regular schedule.....

Oatmeal and Applesauce Pancakes

GREAT pancakes! What I did differently: added 3/4 tablespoon cinnamon, couple pinches of nutmeg and 3 tablespoons of organic cane sugar. Also- used 1/2 cup of cottage cheese (that was smushed a bit extra with a fork to minimize the lumpy-ness) in place of sour cream (didn't have any). Even with this change, they were wonderfully hearty and moist. Will definitely make again- with Stonyfield organic maple yogurt and walnuts. mmmm.

Seasoned Turkey Burgers

These burgers were pretty tasty. My family ate them all, but I didn't get the rave reviews I was hoping for. I think the onion soup mix slightly overpowers the flavor of the main ingredient; the turkey. Other than that, these were easy to throw together on a busy weeknight. Thanks for the recipe!

Sweet and Sour Sauce I

This sauce came together in about 5 minutes, which was great. Adding a little pineapple juice with a few pineapple chunks, and even some maraschino cherries would make this a 5 star sauce. Thanks for the recipe!

I have to agree with some of the other posts that these kindof taste like tootsie rolls, but I loved them. I dipped them in powdered sugar. They were a family hit.

Taco Pasta Salad

This was absolutely delicious! I used green onions (scallions) instead of regular, and I also used a combination of green, red, and yellow bell pepper for color. I served this with sour cream and salsa on the side. Everyone raved about it! Thanks for the recipe!

Spinach and Tortellini Salad

This is a TEN star recipe! I quadrupled it to feed a crowd, and everyone loved it. I added chopped red onion for flavor and texture. I also placed a bowl of crumbled feta cheese (YUM) next to the salad so that anyone who wanted could sprinkle it over their salad. That gave it an extra special touch and a great boost to the flavor. I will be making this over and over again...Thanks so much for the recipe!

Oven Fried Chicken II

This was just ok for us. The taste was good, but I definitely think it would have been better on boneless/skinless thighs, or even boneless breasts. I soaked the thighs for a few hours before coating and baking in a brine mixture of water, salt, and sugar. It really helps to give the meat some flavor on the inside, and not just the outside. I might try this again with boneless/skinless chicken. Thanks for the idea!

Chicken-Baked Chops

This is a wonderful way to make delicious pork chops. I doubled the recipe, and used a big roasting pan. I didn't pan fry the chops to brown them. Instead, I broiled them in the roasting pan for about 7 minutes on each side. This worked out beautifully. I had one less pan to wash, not to mention that I cut out the need for added oil. After broiling, I added the sauce/gravy. I used one can of Cream of Chicken, and one can of Cream of Mushroom with Roasted Garlic. The rest of the ingredients were per the recipe. I baked the chops for about 1 hour and 15 minutes, as my chops were on the thick side. When it was finished, I took the chops out and placed onto a serving platter, and tossed the sauce/gravy with egg noodles. I also threw in a generous amount of fresh parsley. My whole family LOVED it, and I will definitely make this again. Thank you!

No Time to Cook Chicken

This was really good! I made some changes, but stuck with the basic idea. I used 2 cans of Cream of Mushroom with Roasted Garlic mixed with 1 cup of sour cream, about 1 cup of water, 2 tablespoons of worstershire sauce, and a tablespoon of paprika. Before placing the chicken breasts in the bottom of my crock pot, I rubbed them with freshly ground black peppercorns, garlic, and sea salt. After pouring the sauce mixture over the chicken, I cooked it on high for about 4 hours, and the chicken was moist and very flavorful. The sauce/gravy was awesome, and we put it over mashed potatoes. My family (me, my husband, and our 4 boys) loved it!

Sweet Potato-Turkey Meatloaf

I thought this recipe was an interesting spin on traditional meatloaf. I just used plain bread crumbs that you buy in the store and kept adding more until the meat didn't feel too moist. Great recipe!

Lentil Soup

Fantastic recipe! After recently returning to a vegetarian lifestyle, I've been searching for filling and nutritious recipes I can make on Sundays that'll last me as leftovers all week. This one is a definite keeper for my recipe book. Changes I made (based on the many reviews I read): Firstly, I browned the onions and garlic together in the olive oil to really bring out the garlic flavor. I used 11 cups of water, and 6 veg. boullion cubes, 1 & 1/2 teaspoons of both oregano and basil. I also added garlic salt, 3 bay leaves and some extra crushed tomatoes. I like my soup a bit more brothy, so if you do, too- definitely add more water/stock. It makes a difference. All in all, wonderful.

Awesome awesome awesome!!! Just like my grandmother's! I'm so pleased. I'd tried other recipes before and my popovers never "popped" correctly. I had no custard cups so I ended up working with a muffin tin and 12 perfect little popovers!! Excellent!

Marshmallow Treats

I definitely should have heeded the advice of others and used the microwave to prepare the marshmallow/butter goop- my saucepan is going to soak for a few hours before I attempt to scrape the toasted sugary mess from the bottom of it. In anycase, the taste of these treats are divine. I used 1/2 cup butter, 4 cups marshmallows and 5 cups of chex cereal (3 cups wheat, 2 cups corn). The combo of these 2 different chex flavors is near perfect!

Angie's Dad's Best Cabbage Coleslaw

I was skeptical that this would taste right. I love coleslaw, and tend to like the moderately creamy kind. However, not having the supplies for a creamy slaw and with a 3/4 of a cabbage in the fridge, I tried this recipe out. I am SO impressed with how tasty it is. I followed the directions from other reviewers, and cut down on some of the ingredients- I used 3/4 c of organic cane sugar, 1/4 cup of olive oil, 3/4 cup of CIDER vinegar, and still used 1 tblsp of both salt and crushed mustard seeds (I sort of had to wing it. A rolling pin & a ziplock allowed me to crush it up for the most part!). I also opted to add about a 1 tsp of black pepper. I also only used carrots and cabbage, but goodness me- I will gladly be eating this for lunch all week...it makes a huge batch! Delish! I'll make again often!!

Barbie Doll Cake

great recipe. I used my pampered chef large batter bowl and an 8 inch round cake pan with 2 boxes of cake mix and it was perfect. I did drop the temp a little and add time but I don't recall exactly the numbers so that it would cook through. I did have to bend Ariel's legs to get them in the cake at a good level but she fit just fine and my neice Emma was tickled pink when she saw it. I made a matching little ariel for my neice Sara as it was a shared birthday party and she just demolished it all. Both were thrilled that they had a doll to play with later. A fun recipe.

Portuguese Sweet Bread III

I changed it a little. I added 4 more egg yolks to make it more yellow and an extra half cup of sugar. it comes out pretty dense and much more authentic this way. Not exactly heart healthy but surely YUMMY!

Lazygirl's Ground Turkey Stroganoff

Although I added my own twist on this, it was absolutely delicious! First off, I did use all of the ingredients for the "stroganoff", but I added an envelope of onion soup mix and a generous amount of garlic & herb seasoning. I also substituted milk for the water, and increased it to about 2 cups. I added a can of sweet corn, and a can of sweet peas, and we had the mixture over mashed potatoes instead of noodles. It was wonderful....sort of like an inside-out sheperd's pie. My kid's couldn't get enough of it!
