Sweet Baby Carrots

This is now a holiday staple. I boil the carrots ahead of time then then finish the rest 5 minutes before we sit down so they are hot. PERFECT!

Cranberry Apple Pie

This is the first time I made a Cran. Apple pie with fresh cranberries,( I make one with craisins).This was very good,although,I will add more cornstarch next time.The pie was very runny, even after sitting for 5 hr.I didn't see the need for the lemon juice since the cranberries are very tart anyway, so I didn't use it.I used Baldwin apples .They are a very good,medium sweet, pie apple that hold their shape. They went really well with the tartness of the cranberries. I will definitely make it again.

Chicken and Red Wine Sauce

This was good,but,it was way too sweet for me ,even though I cut the sugar to 1/2 cup.I didn't want candied chicken.Cut the brown sugar to 1/4 cup.I also browned chicken and set it aside.I then added onion,celery,carrots and browned them slightly.added the cup of wine plus 1 cup of chicken stock.Then I added the chicken with some quartered mushrooms and some broccoli spears and simmered for 20 min.I thickened it with a slurry of 2 Tbsp. cornstarch.I served it with Brown Rice .I will make it again, with less sugar.
