Pork Roast with Thyme

I used a pork sirloin bone in roast. It turned out great. I did add an apple at the begining for a little sweetness and half a packet of onion soup mix with 1 cup water. Next time I will use a boneless roast and I will double the vinegar sauce. It was definetly a hit with my husband.

Outrageous Chocolate Chip Cookies

The only thing I do different iuseing mini semisweet chips and put about 1/3 cup of diced walnuts. They are a five star for sure.

Apple Raisin French Toast Strata

i made this recipe as stated and it was good but it needs more cooking time. It was soggy and definately underdone when i served it. After putting it back in the oven for about 20 min., it was much better. I would add cinnamon next time for more flavor. Kind of reminds me of the bread pudding my mother made when i was a kid.

After-Thanksgiving Turkey Soup

I really wanted to give this recipe five stars but does it really need a cup of butter!? I used 2 tablespoons and used fat free half and half with the full amount of flour and this was a fantastic soup. Actually its more of a stew but it is fantastic. My husband, who does not eat leftovers, ate this for 3 days!

Broiled Tilapia Parmesan

This was my first time cooking tilapia and, although i really enjoyed the parmesan coating, i didn't care for the tilapia. I will make this again using a different fish, maybe cod or haddock.

Orange Chicken Stir-Fry

This is a difficult recipe for me to rate. I tasted the sauce prior to adding it to the chicken and didn't care for it. It might have been okay once added to the chicken but i added some honey and found it much more tasty.

Brooke's Best Bombshell Brownies

These are the best brownies ever! The only thing i changed was to use milk choc. chips and used parchment paper for easy left out, cutting and clean up. This will be my go to brownie recipe

Basic Pasta

I can't belive that i made my own pasta. I am so proud of myself! I admit that it was quite a bit of work to kneed the dough as it so stiff and alot of work to roll it out thin enough but the end result was worth it. I doubled the recipe and added some basil to half of it. Used a pizza cutter to make nice, even, thin slices. If i decide to make this on a regular basis, i think i would invest in a pasta machine.... or give up my gym membership and use this as my exercise! haha

Pecan Pie Bars I

These bars are wonderful. I needed to add a bit of ice water to my crust as it was too crumbly for me to handle without it. I used the recommended size pan, which i lined with parchment paper for easy lift out and cutting. Will definately make again.

Florentine Artichoke Dip

This was my first attempt at artichoke dip and my only question is this....why didnt i start making this years ago? I have always ordered it in restaurants and this recipe is easy and at least equally as good. I did use suggestions from others to halve the cream cheese and mayo and add sour cream. I think the key is to use fresh grated parm. served with blue corn chips for a delicious appetizer. Was well recieved by my guests.

Slow-Cooker Chicken Tortilla Soup

This soup is so easy and so good. I highly recommend. Took advise of others and used raw chicken breasts and shredded it before serving..It basically fell apart anyway. Used store bought tortilla chips. Please don't leave out the sour cream if you can allow for the extra calories. Next time i may stir some low fat sour crean right into the soup after cooking.I dolloped mine on top of each bowl and we just ended up mixing it in anyway. Super delicious

Pesto Tuna Salad with Sun-Dried Tomatoes

I am a big fan of both pesto and sun dried tomato so this recipe seemed like a sure thing but the end result was terrible. Way too much pesto. I threw out the sandwich after the first bite. Trust me when i recommend cutting way back on the pesto unless you want a pesto sandwich

Dutch Potatoes

fabulous side dish...i wouldnt change a thing about the recipe. If you have any leftovers, they make great potato patties by shaping, dipping into flour and frying to a golden brown in a little butter.

I liked these cookies a lot, I did add 1 cup mini semi sweet choc. chips to recipe. Next time I would add less salt. May 3/4 teaspoon or 1/2. Other then that they were great.

Oatmeal Raisin Cookies I

I liked these cookies a lot. I added 3/4 cup of diced walnuts to the recipe. I made larger cookies then the recipe called for so I cooked them 10 to 12 minutes. They turned out great.

Cheeseburger Soup I

rave reviews from all that ate this soup (i dont eat beef but it looked great)!I would consider it a stew as it is very thick. I doubled the recipe and used 1 1/2 pounds hamburger. Glad i did. Serving size would be very small to get 8 from a single recipe. I think i will just eyeball the amounts next time. This is a recipe that really doesnt need measuring of ingredients.

Salsa Chicken

I always pound boneless chicken for recipes like this as i find the chicken is so much more tender and flavorful. I know it's not fun to pound chicken but its worth the effort. I cover the chicken with tin foil and use my rolling pin. I made this with homemade taco seasoning and it came out very moist and quite delicious.

Downeast Maine Pumpkin Bread

i'm giving this recipe 5 stars and kicking myself a little for not making it as written. I took suggestions of many others and decreased the sugar to 2 cups and used 1/2 oil and 1/2 applesauce. Although many others like it that way, i would have prefered it sweeter and with the extra moistness of the oil. I will make this again and will follow the recipe exactly.

Spanish Rice Original

This rice is good but needs alot more liquid than stated. I followed the recipe and it was very dry before it was done. I added more broth near the end which made it kind of mushy. If i make this again. i will add alot more liquid at the start.
