I am a 27 year old female that absolutely loves to cook. I also love going out to dinner. I consider it an art. I make a full course dinner each night of the week. I am a single mom of a 7 month old baby boy whom does eat solids and wants to eat everything mommy cooks , but he is just a bit too young for all the spices and ingredients I use in my recipes. I use cooking as stress relief. I also love to have dinner parties, usually once a month or every other month.

Coffee Shop Fudge

Okay ... so I won't say it was the best that I have ever eaten, but it certainly was very, VERY good ... and the ease just blows my mind! Husband ate all the pecans in the house before they could get into the fudge, so I made it plain. It was great. As my morning coffee wasn't all that strong, I added just a tiny bit of instant espresso to make it so - this was perfect. I would absolutely make this again ... it was great! PS - If you find that you like this recipe with the coffee and cinnamon, try the Cappuccino Brownie recipe on this site - to die for!

Green Bean Blue Cheese Salad

This in a one word, FANTASTIC! My husband made this and it was amazing. So simple, so delicious with wonderful flavors. I couldn't stop nibbling! We omitted the pecans, but no worries, this is a wonderful side dish that would compliment any meal. This is a definite keeper!

Cavatappi with Spinach, Garbanzo Beans, and Feta

I made this scaled to 8 servings. It is wonderful, fresh and delicious! Even though scaled to 8 servings, it is a heft amount, something to think about when you decide to make this recipe and there is only 4 to serve! I didn't add or delete anything, but I was thinking it might be nice to add a little parmesan to the finished product? My husband didn't think so, he thought it was perfect just the way it was made. The lemon adds just the right amount of zing, don't forget that! I almost did, and when added, defintely brightened up the flavors!
