Chocolate Chocolate Chip Cookies I

My husband said these were the best cookies he ever had! Need I say more? I would give these 10 Stars if I could. I like to use the chocolate chunks instead of chips. Also very good with peanutbutter chips or white chocolate chips & macadamia nuts! Be sure not to overcook.

Neat Sloppy Joes

I loved this, so did my kids. I saw the other comments and used less brown sugar (about 1 Tbl). Since I didn't have tomato soup I used a can of sauce. Thank you for sharing your recipe.

Monkey Bread I

I make this every Christmas Morning for my kids. It is a family tradition. I use kitchen shears to cut the biscuits into quarters. That saves a little time. Like others suggest, poor have the sauce when you have put half the biscuits in the pan.

Downeast Maine Pumpkin Bread

I thought this was a great recipe. I did use 1 cup brown sugar and 2 cups white sugar as other suggested. I used 2 9x5 loaf pans and baked for about 65-70 minutes. I put raisins in one loaf. This was moist and delicious!

Good Old Fashioned Pancakes

Very light and fluffy pancakes. Suggestion: If doubling the recipe, don't double the amount of baking powder. This makes the pancakes seem bitter. (I think 1 1/2 tbsp is plenty). I added about 2 tbsp of lemon juice as well (this offsets any bitterness). A little vanilla extract would also be good as others have suggested.

Italian Cookies II

These cookies are okay. Very easy to make and very moist. They just don't have much flavor except for the frosting. But it's a great way to use up leftover ricotta cheese. I will try again but I will add either anise or lemon extract instead.

This was delicious. I doubled the recipe and it went fast! Next time I will triple or perhaps quadruple the recipe! I served with olive oil seasoned with basil, oregano, garlic and crushed red pepper.

Italian Wedding Soup I

Great recipe. I added a little celery and added escarole at the end and cooked until tender. I also used ancini di pepe instead of orzo. If you prepare this in advance you might want to have some extra chicken broth on hand or use a little less pasta. The pasta really sucks up the broth after it sits in the refrigerator overnight.

Eclairs II

This was a great recipe. I'm an experieced baker but had never attempted eclairs before. Everyone raved about them. I piped in filling with a pastry bag. As others mentioned, the filling recipe makes way too much for eclair recipe. I doubled the eclair recipe and made filling recipe as is and still had a little filling leftover.
