Fluffy Peanut Butter Frosting

Perfect! Just what I was looking for. My son wanted a chocolate cake with chocolate buttercream frosting and peanut butter filling in the middle. This frosting worked perfectly as the "filling". I just used half the recipe. This will be my go-to peanut butter frosting from now on.

Hot Artichoke and Spinach Dip II

This is one of my go-to recipes for parties. Everyone loves it. I usually double it because it goes fast. It's great served with pita chips or tortilla chips. Like others mentioned, I find no need to add salt to this recipe.

Lemonade Pie IV

Very good and easy to make. I've made it with lemonade before but this time I decided to try the new Bacardi frozen drink mixes. I used rum rummer. It's just the mix....no alcohol included. It was fantastic. They also have margarita, mojito, fuzzy navel, and pina colada. I think they would all taste great.

Annie's Fruit Salsa and Cinnamon Chips

This was heavenly. My guests just loved it. The best part is that my kids love it as well! Like others, I didn't feel it was necessary to add sugar. I simply used Raspberry preserves. I made sure to dip the apples in lemon juice to avoid browning. The cinnamon chips were a hit as well. I did not coat the tortillas with cooking spray (yuck!). I brushed them lightly with butter and then coatd them with the cinnamon/sugar by putting them in a ziploc bag and shaking them. I also turned the chips half-way through baking (which actually took 12-15 minutes for me). If I'm short on time I might use the Stacy's cinnamon chips instead. This would be good on ice cream or angel food cake as well.

Make Ahead French Toast

Delicious! This is truly for those who have a sweet tooth. It is very sweet. My kids love it. Watch this carefully though. Mine was done in less than 40 minutes. (Probably a little more than 30 minutes)

Broccoli Rice Casserole

This is just like my mom's tried and true recipe. The only thing I do differently is use a 16 oz jar of Cheez Whiz instead of the Velveeta. I don't know if this makes a big difference in the taste, but I don't have to worry about cutting up the Velveeta and melting it.

Fish Chowder

Mom's Coleslaw

This was just the type of cole slaw I was looking for. I added a bit of pepper. Otherwise, I used the recipe as is. I was afraid that it was going to be a little to sweet but after mixing with the cabbage and letting it sit in the refrigerator for a few hours it was perfect. Be sure and add the dressing to the slaw only as needed. I don't like my slaw "soupy" so I didn't end up using all of the dressing.

Sunshine Ice Cream Pie

This was a hit at my family BBQ. I needed a very quick dessert. This did the trick. I did leave out the coconut as I knew I had guests that didn't like it. It does taste like a creamcicle! I will definitely make again. I will try other flavors of sherbet with it as well.

Lemonade Pie V

This is a very tasty pie. I was torn between giving it a 4 or a 5. If I could, I think I'd give it a 4.5. My only problem was with the recipe itself. If you only let this set up in the freezer for 20 minutes, you will have a very runny pie. I made this just a few hours before serving to my guests and it was too runny to serve. Also, there is probably enough to make 2 pies in this recipe. Otherwise, I was very pleased. It is a very tasty recipe once the pie has been in the freezer long enough. I would suggest at least 6 hours to set properly. I'm going to try one with lime-aid next!

Raspberry Lemon Marmalade

I loved the simplicity of this recipe. I used frozen berries and lemons from our tree. My only problem was that I wasn't sure what size of lemons to use. I ended up using 4 large ones and it worked great. My family likes things tart tough so if you want a sweet taste use medium lemons. Thanks for sharing!

Scottish Shortbread IV

Absolutely delicious. I added a little vanilla to mine. Everyone in my family loved these. I agree with other reviewer. Beware the cooking time. I baked at 300 and mine were done in 20 minutes.

Brown Sugar Shortbread

This was just what I was looking for. They were very buttery and my whole family loved them. I added a tbsp. of vanilla extract. I only needed 20 minutes cooking time. Watch them carefully. PS: This is the same recipe as Scottish Shorbread IV only cut in half.

Scottish Shortbread I

These were good. Not quite what I was looking for. These are a bit plain but still tasty. I prefer the shortbread made brown sugar. I was looking for a shortbread cookie that tastes like a Lorna Doon. I thought the Scottish Shortbread IV recipe was the best.

This is a wonderful recipe. I baked for Christmas Dinner. I usually make dinner rolls but opted for loaves this time. This was a perfect recipe. It was very easy and not as time consuming as dinner rolls. I will take others suggestions and try adding cheese and herbs next time.

Beef Tenderloin With Roasted Shallots

Excellent recipes. My in-laws could not stop raving about the sauce. I followed the recipe for the most part but took out the shallots and put them on the platter with the tenderloin. (My kids would have revolted if they saw the shallots in the sauce.) I will most definitley use this recipe again. I cooked our tenderloin to a temperature of 140 degrees as my father-in-law likes his meat more toward well done. I would say the meat was cooked to medium at 140. It was hot throughout with a pink center.
