About me:
Born and raised in New England, learned cooking under my Italian mom who could make something out of nothing, she was very creative and successful at it. That rubbed off, I have to force myself to follow a recipe. Very often create my own. Moved to TN, husband born/raised in the South. Had to learn cooking all over again--cornbread, white/brown beans, turnip greens, fried catfish, hush puppies, creamed corn, fried okra, grn fried tomatoes, buttermilk biscuits--an endless list of delightful culinary southern delights. I still prepare authentic Italian meals, but not as often as I would like.

Apple Pike

This is not a recipe-it's a yummy little TOY! It came together very well, although I did have to bake it 30 minutes, like some others did. I didn't add oil or butter, and I don't think it needs it-the quality of the apples is most likely the key to this one. I'm going to try this with other fruits, different spices, and maybe different flours.

Potato Salmon Patties

My husband must have liked these- he didn't douse them with ketchup or hot sauce. That says alot! I'll make these again, for sure.
