I have always enjoyed cooking, both of my parents are excellent cooks, well, my dad was a chef before he retired. I attended cullinary school in Toronto and after graduation moved to Massachusetts. I managed a restaraunt in NY City and then settled back on the Cape.

Chicken Tikka Masala

This is REALLY, REALLY good! I make it mostly for when company comes over because it seems like a lot of work. Today however, I really wanted it but didn't want the trouble so I bought a jarred Tikka Masala sauce. YUK. I threw the jar out and decided to follow this recipe, but instead of marinating the chicken (no time...) I diced the chicken and added the marinade ingredients, stirred it up a bit and threw it into a skillet. I added the remaining ingredients when the chicken was almost done. WOW! It was just as good this way, possibly even better since the chicken was more moist. I did end up substituting sour cream for yogurt because I didn't have any, but I would stick to the yogurt next time. Other than that, this will be the way I make it from now on. Oh! And I always double the sauce ingredients.

World's Best Lasagna

this was good. It wasn't AMAZING like I thought it would be from all the reviews. I doubled the recipe and made two lasagnas. I think it needed more ricotta to make it a little creamier. The sauce was good, but I did add double the spices and I should have added more salt too. The sauce would make a great simple meat sauce over pasta.

Ham with Pineapple

Best ham ever!!! I used a precooked ham butt. Not a spiral sliced because they dry out too much, but it was already pre-cooked. I used the juice from two cans of pineapple and about 1/2 cup more sprite. I also omitted the cherries. 12 lb ham cooked for 2.5 hours at 350. People literally said it was the "Best Ham they had ever had" Thanks for such a simple and traditional recipe!
