Roast Sticky Chicken-Rotisserie Style

Mango Chicken Curry

I substituted the tomato paste with red curry paste. The more curry the better :) And I substituted the fresh mango with mango chutney. I also added a little chicken stock to make the sauce more liquid. YUM

Chocolate Trifle

I have made many trifles in my life....but this is THE BEST! The mousse filling is decadent. If you are looking for healthy, you may want to skip over this, but is you are looking for something sinfully delicious...make it!

Three Berry Pie

Delicious, easy pie to make. I used a combination of fresh and frozen berries. Remember that frozen berries add a bit more liquid, so add a little more flour to thicken it up!

Cream Filled Cupcakes

This is a very good filling, I used all butter, and cream instead of milk, because if your going to eat a cupcake, why not make it as decadent as you possibly can. Delicious! It was great in my brightly colored Tie Dye cupcakes for Easter (the frosting was lime green).

Taco Pie

My family LOVES this recipe...and with 5 kids, that is saying something! I doubled the recipe and adjusted (as I always do) by adding some lower fat cheeses and sour cream, but don't tell the kids! They even love this the next day, reheated in the microwave.

Spaghetti Sauce II

Fantastic basic recipe! I think every good cook makes a recipe their own by adding their own seasonings and such, but I am giving this 5-stars because this gives you what you need as a great starter. Cooking this in the crockpot for the afternoon really made this rich and thick, just how my family enjoys it. I added cooked, shredded chicken for a nice change, in place of beef.

Sweetened Condensed Milk

I lost me original recipe a few years back when we moved and was looking for the perfect homemade sweetened condensed milk, again. Sadly, this was not it. It wasn't horrible, but as other posters had mentioned, consistency was not my favorite. The flavor was good, though and I would use this recipe again for certain recipes.

Slow Cooker Pulled Pork

This was surprisingly good! I have used other more complex recipes for BBQ Pulled Pork, but Ihave to say, this was comparable and very easy! I used this resipe in a beginners (kids)cooking class...the overall concensus was "AWESOME!"

Rich Chocolate Frosting

Very good chocolate frosting recipe. The balance of butter and chocolate flavor is perfect. I halved the recipe and it was still plentiful to fill and frost a 2-layered 9-in. cake! Thanks for the recipe, it was easy and delicious.

Broiled Tilapia Parmesan

One word OUTSTANDING!!! This is so easy. I put mayo on the fish and sprinkle carribean seasoning on the top, broil, put parm cheese on it, broil a little more, and where done. Squeeze fresh lemon juice on top, and serve with rice pilalf. YUM..

Coconut-Avocado Ice Cream

This concoction was very interesting. I used 1 1/2 avocado and minimized the sugar. I love avocado, but I had a hard time eating this because of the consitancy. This is the most creamy ice cream I've ever had. But I'm used to the thicker texture with the avocado. I think if you love avocado more than coconut, you'll really like this. I just happened to like coconut better. It was definatly worth a try, and I've been wanting to make this. Maybe next time I would put in pineapple concentrate and less avocado. I hope this helps someone.
