Shiitake Angel Hair Pasta

AWESOME! I doubled the sauce and made about 10 oz of linguini and thought it was a perfect ratio. After adding the wine and broth, it took about 10 mins to reduce... and then after adding the cream it took about 10-12 mins to thicken. Served with grilled chicken and asparagus (simply brushed with olive oil and kosher salt and broiled for 4 minutes... so good). With a sprinking of fresh parmesan and parsley, it looked amazing and I was thrilled that it tasted as good as it looked! Thank you, Ann!!

Apple Carrot Muffins

Using King Arthur organic white whole wheat flour made these even healthier and still delicious. They freeze beautifully and are great as a side to an omelette or by themselves as an "on the go" breakfast. What a find!

Saltine Toffee Cookies

Seared Ahi Tuna Steaks

Perfect, the only change I made which kept down the smoke was to only use olive oil. I cooked this in a cast iron pan which is great for maintaining heat and getting super hot.

Fish Chowder

Without changes, this is definitely NOT a 5-star recipe. And everyone that rated it a 5 star made tons of changes! I don't get that! Anyway, instead of a whopping 1/2 cup of flour, we pureed 2 cooked potatoes and 1/2 can of corn... then we we added the clam juice, we only had to add 3 tbsp on flour to it before mixing it in. Also, omitted mushrooms and added a can of corn when we dropped the fish. And used 2 cups fish stock, 1.5 cups chicken stock and 1/2 cup of cream. It does need a LOT more seasoning, so we doctored it up with salt, pepper, old bay and cayenne. I think worcestershire would give it a nice flavor and depth too. Thanks for the base, but be prepared to do some "tweaking".

Reunion Meatballs

I followed the recipe exactly. It was pretty good. The meatballs themselves were tasty, but the sauce was a bit vinegary, I'll cut back on it next time. Also, the sauce was pretty thin, which was kinda dissapointing.Overall, it's good though. Thanks!

Roast Chicken with Rosemary

We also stuffed this with lemon wedges, onion wedges, garlic cloves, and rosemary, and slathered it with olive oil, crushed garlic, and rosemary, put chunks of potato, parsnip, and carrots beneath it, and poured chicken stock over it, baking it for 1 and 1/2 hours. The skin was crisp and flavorful, the chicken was moist and delicious, and the potatoes, etc, were done perfectly. An amazing meal!

Eggplant Parmesan II

I made this and it was just okay for me. It was the first time I ever ate eggplant, and I think I just didnt like the eggplant itself. I'm giving it 5 stars because my roommate and her friends loved it, and even asked me to give them the recipe. For me, I just think I'll stick with chicken.

Delicious Apple Sauce

VERY delish. I reduced the amount of cinnamon and sugar, and drained some of the water off before putting in the blender for a few quick blends. It's really up to your own personal taste how much cinnamon and sugar you use...I had chopped up the apples instead of shredding them, leaving the applesauce chunky - PERFECT for my 16 month old learning how to use utensils! Very good on vanilla ice cream or all by itself.

Pumpkin Cookies V

It was hard to rate this. I absolutely love pumpkin cookies (added a little more cinnamon then called for). The cookie recipe is good. But, the icing just did not come out well. And I found it just too sweet. I bet the cookies would taste yummy with some nuts in it...

Chili-Lime Chicken Kabobs

This is one of my favorite dishes (the fiances too). I live in a condo and cannot have a grill. I basically use the marinade recipes for chicken tenders. I let it marinade in the fridge for about 1 hr and pan cook it. Usually serve it with some rice and cilantro. Mmmmm...

Jalapeno Poppers I

My first attempt at Jalapeno Poppers came out great! Took a lot longer to prep than I expected due to the seeding process. I used jalapenos I grew at home and they were smaller than normal so I only used half the filling and half of the cheddar. I think that something was missing. It was spicy, but maybe if I dipped it in something it would've been better. A friend tasted them and suggested dipping these in warmed raspberry jelly before eating. I'll have to try that next time. Thanks for a yummy recipe!

Dutch Apple Pie with Oatmeal Streusel

This is a GREAT pie! I made my own crust and I used the suggestions and brushed with an egg wash and put it into the fridge while i was preparing the apples. I did not bake it. It really made a difference. I also cooked it covered for almost 1 hour. I like my apples really soft and it cooks away the liquid. Also, I baked it on my lowest rack in a glass pan and the crust was perfect.

Brooke's Best Bombshell Brownies

SO good - only used 3 eggs, substituted one cup of the white sugar with brown sugar, and put some chopped up frozen peanut butter cups on top that I had left over from another recipe. SO SO good - didn't last long!
