Lana's Sweet and Sour Meatballs

5+++ The meatballs and the sauce were delicious. I realized half way into making the sauce I didn't have any pineapple and didn't have time to go the the store. I therefore improvised...I watered down some lemon juice and amazingly it was extremely tasty.

Yia Yia's Tzatziki Sauce

Delicious! I ate it all up with Gyros Burgers! I changed the yogurt to fat free (just remember to drain it in a collander lined with a paper towel or cheese cloth so it's not too watery) and the sour cream to low fat. I also halved the recipe since it seemed like a lot and it was the perfect amount for eight sandwiches. I added salt and pepper to taste.

Gyros Burgers

Absolutely delicious with Yia Yia's Tzatziki Sauce and feta on pita bread. I doubled the recipe and couldn't find dried savory anywhere but it's great without. My roommate and I devoured them!

Basic Baked Spaghetti

Simple, easy and a great starting place. I thought it was a little dry though, so I will add another jar of sauce next time. And I like to add at least S&P to the hamburger (I usually also add dried red peppers, basil and oregano). I also like more cheese, so doubled cheddar and added some parmesan.

Creamy Vegan Corn Chowder

When I first read this recipe I thought to myself, "What? No potatoes?" As a new vegan I find it important that meals are as hearty and satisfying as possible. So, with such a promising start, I eagerly set to work in the kitchen. I pretty much followed the recipe exactly except after sauteeing all the veggies I added 2 cups veggie broth along w/ th potatoes and simmered that until they were fork tender. I then added 1 cup frozen corn and 1 can cream style corn and the rest of the spices. (I however, did not add the garlic clove.) It was delicious! 5*****'s after changes.

Microwave Caramel Popcorn

Hold your horses everyone! This one is a keeper. Way too good to be made if you are not expecting company! I made this for my son's birthday party and found myself parked close by the bowl a lot! I doubled the recipe and it worked great in the microwave. You really do need to shake it vigorously, so don't be shy. I also added a small can of roasted salted cashews to the bag of popcorn before adding the caramel. Sweet and salty . . . do I need to say more?

Apricot Chicken I

It is good and I make this often. The longer you allow it to cool the thicker the sauce becomes. Another option to this recipe is to pan sear the chicken before baking. This step while a bit more work helps seal in those juices, also cutting the pieces up a bit helps to create more surface area for the sauce to cling to. All in all a good staple week night dish.
