This is a great recipe for one of the summer's most prolific vegetables. Sauteed zucchini pieces are coated with a zesty marinara sauce and sandwiched with a generous helping of mozzarella cheese. These baked sandwiches are a great vegetarian version of the Italian grinder. They can also be made ahead of time, and heated just before serving.

Colorful Bulgur Salad

The bulgur is cooked in chicken broth which gives it a hearty flavor. And the dressing is pungent and wonderful. All the veggies - tomatoes, carrots and cucumbers - blend in beautifully, and the whole salad comes alive when chilled.
