Downeast Maine Pumpkin Bread

It was a good bread. Didn't have as much flavor as I would have expected - especially being in Downeast Maine. Next time, I'll increase the spice. I do like the versatility with the batter. I was able to make three loaves: regular, cran pumpkin and chocolate chip pumpkin.

Carrot Cake III

Big Soft Ginger Cookies

This is an incredible recipe. We had an open house for the local historical society and everyone wanted the recipe! Instead of rolling in sugar, I prepare a butter/powder sugar glaze and these cookies are an instant hit.

Pecan Pie Tarts

I was looking for something to add to a potluck at work and decided personal pecan pies would be fun. I cut the recipe in half and had enough to fill 6 regular sized muffins. I did fill them more than half full but it didn't bubble out. Tops are perfectly browned and the crust is amazing. I did add a dash of salt to the crust and filling, just a pinch for flavor really. I will be making more of these as they are a wonderful way to control portions and skip the hassle of cutting and serving a real pie. Pipe the top with whipped cream or cool whip, sprinkle with a touch of cinnamon sugar add a whole pecan half (candied is nice) and its perfect.

Hard Candy

OMG, this is exactly how my grandfather made it every holiday season. He used to make red, green, white and yellow. Each got stored in a coffee can right next to the fruit leather and other dried fruits. My favorite was always wintergreen and anise.

Spiced Pumpkin Fudge

I have been buying pumpkin fudge at the fryeburg fair for the past decade, but this is the first time I have tried to make it myself (since the people there won't give me the recipe). Its not as dark in color or as pumpkiny or moist but its not bad. It was pretty easy to cook to the right temperature with a candy thermometer. Spread in the pan easy. I think it sugared a bit on me, but its still edible enough. Gonna have to remake a batch for work though, tinker with the pumpkin levels and maybe dark brown sugar.

Banana Sour Cream Bread

Wonderful! I made this for a EcoPeace event at my college, so I lowered the sugar to 2 cups, and added some wheat germ to the mixture used to flour the pans, as well as to the mix itself. I used all whole wheat flour, and added a half tsp. of each to the mix: ground cloves, ginger, allspice, nutmeg. drizzled with vanilla glaze. looked and tasted lovely. thanks for the recipe! will make again!

Skillet Ham, Cabbage and Potatoes

The person who wrote this recipe must have a much bigger skillet than me! I used a large cast iron skillet (12 or 14 inches in diameter) and it was not big enough. The onion and potatoes and ham filled it up, so I had to make the cabbage seperately. Still, once mixed all together, it was very tasty! I used more than a dash of seasoning salt, also added regular salt and pepper and a bit of garlic salt. I also used olive oil rather than butter, and needed more than 1/4 a cup of water even though i cooked the potatoes for a few minutes in the microwave before adding them to the skillet.

Peanut Butter Balls II

Well having these around is torture!! I can't leave them alone.. they are just staring at me saying "come on... just one more" Very good!, Sweet! but good! I think next time, like others have posted, I will try the milk chocolate chips.. I think it would taste alot better.. but they are certainly good as is!! I'm sending them to my uncle for his b-day! I also dipped them using a toothpick after freezing them and found it was quite easy that way! then decorated with a few sprinkles..or as we call them, Jimmies! and I only had the cinnamon graham crackers so that's what i used! yum!

Gingerbread Boys

My cookies came out crispy even after just 10 min. I may have cut them too thin.. so I've got gingersnaps!... they are wonderful though!! The flavor of the orange really comes out... I used clementines and did not even use the full amount and could notice it in there.. Very nice addition.. It would have been even nicer if I wouldn't have been so lazy and zested a little more! ;) Very nice flavor.. try 'em! Oh.. and I, like others, subbed molasses for the corn syrup.. I just had to have molasses!! ;)
