New England

The English immigrants who first settled in the upper right-hand corner of America were content to call this place “New England.” They hoped to carry on the food traditions of their old England. But a harsher climate and poorer soils proved incompatible for farming peas, wheat, and other familiar foods. From the Natives, they learned to substitute corn for wheat and beans for peas. Until apple orchards could be established, they used pumpkins in place of apples in sauces and pies. Of course, the very foods that first confounded the pilgrims -- like turkeys, cranberries, and squash --now comprise our most storied national feast, the Thanksgiving dinner. Later waves of immigration would bring Irish, Germans, Italians, Swedes, Portuguese, French Canadians, and freed slaves to New England, who would contribute their own food traditions, often adapting them to make use of local foods. Maine remains synonymous with lobsters, but the cod industry that helped build New England collapsed in the 1990s.

i started cooking like most folks, once i was out on my home, far from the nest, at college and realized that someone had to cook homestyle or we would starve. one of my fondest memories was thursday dinner with my roomate and 2 of our guyfriends. we would switch each week whose apt we would cook at. one week at the girls, the next at the boys, and we tried all sorts of things. the guys really like the alfredo primavera i made and we even tried our first bite of crawfish that year. nowadays, i cook whatever is fresh or sounds good or both.

Gingered Mango Salsa

I used vidalia onion instead of red, as that's what I had on hand, and reduced the cilantro by about half due to personal preferences. I probably used a bit more mango, too, as I used two large ones. I resisted adding some chopped jalapenos, and although they would have gone nicely in this dish, I think what makes this one special is the nice balance between fresh ginger, the mint and the sweet mango. It's a pretty mild and sweet salsa - we served with plain old pork chops and it really brightened up my dinner plate, and this would also go well with fish, chicken or shrimp, too.

Easy Tilapia with Wine and Tomatoes

I cut the wine in half and it was superb. My husband thought this was fantastic, he couldnt stop talking about it while he was eating it and after he had eaten it. I will be trying this with other types of fish as well. It turns out I didnt make enough as my two kids went nuts for this too. I cut the recipe in half since we're not big eaters and made made 2 big filets. Next time I'll make 6 because I think my husband and son will eat 2 a piece. What a flavorful and healthy recipe!

Perfect Pie Crust I

Wonderful! I cut the recipe in half and used it for Blueberry Banana Cream Cheese Pie from this site and everyone raved about it! The only changes I made was using whole wheat pastry flour, which made it healthier too. Thanks for the post!
