Microwave Bread and Butter Pickles

Very easy, very good. However, I am not one for "refrigerator pickles". I made enough at one time, using proportionate amounts, to make 5 large jars (I use the mason jars that come with Classico and other pasta sauces) at a time. I cook them right in the jars, filling with only 1/2 jar of liquid to avoid boilover, then top off with the remaining pickling liquid I've kept simmering on the stove. Leave 1/2" head space and cap immediately. Voila! CANNED B & B pickles!

Annie's Fruit Salsa and Cinnamon Chips

I made this for my daughter's 7th birthday party and the kids LOVED it! I didn't even get a chance to try it, it was gone within the hour! Our a/c broke, so I didn't want to heat up the oven for the tortilla's, so I used Tostito's Gold (they're less salty to me) heated for a few seconds in the microwave, then sprinkled with cinnamon sugar! AWESOME and EASY!

Key West Chicken

This was a great recipe, and I also added teriyaki sauce, and it gave it a sweeter taste. I doubled the marinade and set the other batch aside and basted the chicken while it was grilling, since I didn't get to marinate the chicken overnight like it was recommended.

Baked Brie in Puff Pastry

MADE THIS BRIE FOR A NEW YEARS EVE PARTY AND EVERYONE RAVED. I SPLIT THE BRIE WHEEL IN 1/2 HORIZONTALLY AND SPREAD SEEDLESS RASPBERRY JELLY IN THE MIDDLE AND SPRINKLED W/ ALMONDS. IT WAS VERY GOOD AND IT DIDNT LAST LONG!

I think I must have made these wrong as they tasted like chocolate covered saltines to me w/ a very thin layer of toffee flaver. The saltines were very apparent and didnt absorb any of the toffee layer. Maybe I spread it too thin? Not sure.

Slow Cooker Chicken and Dumplings

This recipe was very good. I did follow the advise of another and used one can of cream of chicken and one can of cream of mushroom, two cans of chicken broth, cumin, chicken seasoning, salt and pepper. I used frozen chicken breasts and shred them just prior to adding the torn biscuits in. Once biscuits added, I turned the cooker up to high and cooked for approx one hr. I was very tasty the next day too..
