Calico Squash Casserole

I've made this several times and it's always turned out well, whether I made it for three or thirty (and yes, I DID make it for thirty). I've played around with the ingredients, but it's best with only a little extra squash. Definitely keep the water chestnuts, pimientos, and especially the Ritz crackers -- it's not as good with any other kind. I've not made it in awhile because it's a better winter recipe, but I'm looking forward to having it again.

Bishop's Bread I

I couldn't find currants at my grocery store, so I substituted plain raisins. Overall it was good, but the fruit and chocolate combination was a little odd. It also dries out VERY quickly, so wrap it securely when storing. I'm going to try it again, this time with just the cherries and golden raisins.

Pecan Cups

They taste great, but I recommend using actual muffin tins (with the paper muffin cups for easy serving) so the mixture doesn't spread so much in the oven. Other than a funky shape, they came out great! I'm actually making them again today.

Spinach Ziti

This turned out well after a few alterations. I doubled the amount of spinach, and it was just enough. The diced tomatoes weren't enough, so I added a little bit of extra tomato sauce and about half a jar of alfredo sauce with mushrooms, and only then was it creamy enough. From what other reviews said, I added a little bit of salt and black pepper as well as a few teaspoons of dried oregano. My roommates loved it, but it definitely needed the extra ingredients.

Garbanzo Bean Salad

This salad was great! I did use some halved red grapes along with a golden delicious apple; I also used slivered almonds instead of the walnuts. I'll definitely make it again with the slight alterations. It's great for a crowd too.
