Lana's Sweet and Sour Meatballs

Reviewed: Nov. 4, 2004
Very, very sweet. I took the advice of another reviewer and added some ketchup -- still too sweet. I added red pepper flakes -- still too sweet. I added mustard -- better, but still sweet. It's pretty good, but I think next time I'll use the pineapple juice but not use the fruit and see if that helps.

Marshmallow Apple Pie

Reviewed: Oct. 11, 2004
Mine came out very watery and the apples did not soften well, even after baking for twice as long as the recipe stated. I added cinnamon to the apples and still found the pie almost flavorless. It sounds like a great idea, but I will continue looking.

Chocolate Crisps

Reviewed: Sep. 13, 2004
Very good cookie that manages to be very chocolatey and at the same time rather light. I added about half a teaspoon of cinnamon and really enjoy the flavor. I also used chopped white chocolate chips instead of the grated chocolate, just because it's all I had on hand, but probably won't do that again. Thanks for the recipe!

Peach Cake I

Reviewed: Sep. 13, 2004
Delicious! The only thing I've had trouble with is that it doesn't keep its shape when you serve it, as I expected a cake to do. But it tastes great, especially warm with a little whipped cream and cinnamon over the top. It's very easy too -- perfect for my unexpected company this past weekend! Thanks, Jenny!

Penne Pasta with Spinach and Bacon

Reviewed: Sep. 13, 2004
This recipe turned out great, with one fairly major change on my part. Mine is not a tomato-friendly household (neither of us can stand the things!) so I used a small jar of sliced roasted red peppers (drained) in place of the tomatoes. I sprinkled some crumbled Feta cheese over the top just before serving and it was a great, light meal. I also used this basic idea for a pasta side dish, except I used orzo in place of penne and I sliced the spinach chiffonnade-style to make the leaf size more suited to the pasta. Great, versatile recipe!

Green Beans for a Special Occasion

Reviewed: May 24, 2004
I've looke all over for this recipe - we used it at our Italian family Christmas party - as we were all tired of green beans with tomotoes. This has been a nice addittion to our menue. However, I do add soy sauce and sometimes either worsteshire or terriyaki while cooking - adds a nice flavor.

Barbie Doll Cake

Reviewed: May 24, 2004
Awesome and soo much easier than I thought it would be! I must have used a bowl that was not big enough becasue we had to take the extra batter and add it to 2 round cake pans in order for it to be tall enough to come up to Barbie's waste (actaully we used Ariel). I also went out and bought those tubes of icing that come with the different tops to add lace and bows to her dress. The cake was the hit of my 4 year old's party - and to think a local store charges 40$ fo rthis cake!!!

My husband and I love these - we were sooo tired of the same old broccolli with garlic and lemon. My 2 year old lvoes it too - but my 3 year doesn't like them so much. What a great way to serve as an appetizer!

Yogurt Whole Wheat Quick Bread

Reviewed: Mar. 22, 2004
I've made this several times and it's always been a hit. I usually use fat-free lemon yogurt in place of the plain yogurt and lemon juice. However, I found that 50 minutes is WAY too long. I set my timer for 30 minutes and then start checking every couple minutes after that. Not too sweet, so it's great to serve with soup.

Bacon Cheeseburger Pasta

Reviewed: Feb. 17, 2004
Pretty good for a quick, filling meal. I've made it several times with various changes and it always comes out well. It's a good "comfort food" for a cold day and kid-friendly. Some changes I've made include using tomato sauce, pepper jack cheese, and some spicier seasonings (like red pepper flakes) for a bit of a kick. I've substituted vegetarian "ground beef" crumbles. I used rice instead of pasta once, and it wasn't as good.

Jesse and Steve's Fresh Strawberry Cake

Reviewed: Feb. 17, 2004
I made this for my boyfriend's birthday this past weekend, and it turned out great! The only reason I gave it four stars rather than five is that I made a few changes to the recipe that I think made it better. Acknowledging some of the previous reviews, I increased the ingredients by half by scaling the recipe to yield 36 servings instead of 24. With the increased amount of batter, I was able to make a layer cake. I also used strawberry yogurt instead of sour cream and added the juice from the bags of frozen strawberries I used. I chopped the berries rather than mashing them. I also used about half a small bottle of strawberry extract. The flavor was still subtle, so I'm glad I added that. I added a little extra flour to compensate for the extra liquid. I also used 2 parts baking soda and 1 part baking powder for a lighter texture. Also, be sure to beat the batter well to make the cake nice and fluffy. We used cream cheese frosting and it was great!

Neptune's Favorite Crab Bisque

Reviewed: Sep. 14, 2003
Decent for a quick soup with a homemade taste. Rather salty, though, even after taking the advice of other reviewers and using low-sodium soups. I tried it as written and also with one can of a cream-based soup (usually cream of celery, just a personal preference) and a can of tomato soup. I might try it with a little tomato sauce rather than soup next time, to thin it out a bit -- a bisque should be creamy, as this is, but not quite as thick as mine came out. An interesting variation: use one small can each of crabmeat, clams, and baby (salad) shrimp for a seafood combination. If you're set on a crab soup, don't do it, but I enjoyed it.

Chocolate Chip Pumpkin Bread

Reviewed: Sep. 14, 2003
I made five mini-loaves and one 9x5 loaf. The mini ones came out great -- wonderful taste and texture. The regular one burned on the edges and was soupy in the center. Four stars for taste -- might be better as muffins. I'll certainly be trying it again that way.

Best Ever Muffins

Horrible, horrible, horrible. No flavor at all (and this was *after* I added chopped canned peaches and cinnamon to the batter and sprinkled brown sugar on the tops), and a gummy consistency. My roommate and I both hated them -- they went right into the garbage.

Texas Ranch Chicken

Reviewed: Sep. 4, 2003
I am soo glad to have a recipe that takes so little time and tastes so good! My 3 year old queen of the fussy loves this dish! It is the magical dish that got her to eat chicken (well -drumsticks only)! I have shared it with my fellow moms as well as this web site! My husband (who my daughter got her fussiness from) loved it also! It is a new family favorite and great for those days that I just don't have time to make a long to make meal! One suggestion: I pan fried the chicken first and it made it even tastier.
