Creamy Chicken and Wild Rice Soup

As is, the recipe is delicious (the only thing I did differently was to use milk instead of cream). I made it a second time adding about two cups worth of mirepoix, and I liked it much better that way. So the recipe as is gets 4 stars, but with the added vegetables, it's definitely a top-ranked recipe in my house.

Glazed Lemon Muffins

This was pretty good but not great. I thought they came out very dense and didn't rise much. Also, as other reviewers have noted, the streusel topping made WAY too much, and also I really didn't think it was a normal streusel--it was very floury and not sweet enough. I made half with the streusel and half with just sugar on top, and the streusel really didn't add anything. Finally, the quantity seems to be off--I cut the recipe in half and still got 23 muffins in normal-sized tins.

Baked Chicken & Brussels Sprouts

Not Wet Anymore! My family really liked this recipe. I solved the "wet" issue by 1) steaming the sprouts, 2) not using milk, and 3) using 1 1/2 cups half n half. I used mozerella, but my kids thought swiss would taste "zippier".

I was excited to be the first to review a recipe! Mine was very very salty. It must be the cubes I used, they were Knorr, 1 cube makes 2 cups. Otherwise very easy.

Slow Cooker Pork Chops II

Shoulder chops browned and only cooked for 4 hrs were dry. Flavor was not impressive. I would guess that only well marbled chops with fat would be more tender.

Fifteen Minute Chicken Chili

Very easy, very good. I substituted some diced tomatoes for chicken broth, and added a teaspoon of molasses in the end because I thought it was a bit too sharp. Also simmered for about an hour.

The Real Mojito

This is my favorite mixed drink now! I loved it sooo much I went out and bought a mint plant and a bag of limes. I had sugar water on hand for my hummingbirds, they have to share it now.

Creamy Zucchini with Linguine

I've made this twice--once as written, and once with some alterations. It's pretty good as a base as written; we had it with grilled shrimp skewers and it made a nice, relatively light dinner. The second time, I added red bell pepper and onions, along with more garlic. We had it with shrimp again, mainly because it's what we had on hand. It was a bit heartier with the extra veggies, and since I gave the onions a good, long browning time, that helped boost the flavor. It's still not a high-flavor dish, but it's tasty and a good way to get the veggies in. You could probably adapt this to whatever vegetables you have on hand and it would still be good.

Country Banana Bread

Super-fast quick banana cake. Very easy. So easy I can't say it's 5 star. Only had 3 bananas, I reduced oil as well, to 1/2 cup - then read the cake box which only requires 1/3 c. - still good. Added 4oz cup of unsweetened applesauce and 1 cup of chocolate chips. Good fluffy cake!

Chicken Stir-Fry

Easy and fun to make. My chicken did not crisp, perhaps because I added extra tbsp soy sauce, dash sesame oil, red pepper flakes to the bag. I used 1 bag froz stir-fry vegs and added an onion cut into thin wedges. I used powdered ginger and garlic then realized I had both fresh so I added the garlic to the bag and extra ginger at end of cooking. Could use more sauce to flavor rice but nothing a few dashes of soy couldn't remedy.

White Chili with Ground Turkey

This is different and delicous. If using the 3-5 cups of broth, I would suggest not adding cheese to pot as it gets stringy and just sticks to the pot and serving utensil. Pureeing some beans for thicker base would probably help this. I used 1 can great northern, 1 can red kidney, and 1 small can corn because it's what I had - and adds some color. I also used some whole cumin seeds, in addition to listed ingreds.

Linguine with Asparagus, Bacon, and Arugula

I used zucchini instead of asparagus. 2 lemons made just over 1/4 cup of juice, I did not use the olive oil in the cooking of zucchini, but put it in w/ the lemon juice and added salt and pepper - mixed and poured over. I recommend to crumble the bacon for more all around flavor. The bites of just pasta were somewhat bland, but my husband says it's a nice summery dish.

This is the same recipe my family makes for Pascha; we call it hrudka. We have an additional step, though. After the hrudka has firmed up and been refrigerated for awhile, put it into a pan or onto a cookie sheet, top with a good pat of butter, and broil until the top browns. Let it cool, rewrap, and refrigerate again.
