Pecan Cups

These miniature pies are made in muffin tins. First, a lovely cream cheese pastry is patted into the bottom of each paper muffin cup. Then filling is whipped up with brown sugar, butter, an egg, and chopped pecans, and dropped by spoonfuls into each muffin cup. Bake and top each mini pie with a dollop of whipped cream.

This is a good, standard chili, with lots of ground beef, tomatoes, kidney and pinto beans, and onions. It needs to simmer for 90 minutes on the stove, or can be made in a slow cooker and left to simmer all day.
