Banana Banana Bread

This recipe was very simple, but not really as good as people give it credit for.It was too moist, and had an unappealing texture. Maybe add more sugar and bake longer I am not sure.

This is so good! Only thing is that you only need about 3/4 cup of bread crumbs - i didn't use all of them.

Apple Crumb Pie

Reviewed: Oct. 25, 2009
This was very good for my first apple pie (first any kind of pie). A little too sweet so maybe cut out some of the sugar. I know the nuts and raisins were optional, but totally use them - they were great. I agree with other reviews that it needs another 1/2 or 1 tablespoon more flour in the filling.

This is the best cornbread I have ever had! Make sure if you double the batch that the pan is big enough O_o

Pumpkin Chocolate Chip Muffins

Reviewed: Oct. 21, 2009
This is the first time I made muffins and they were moist and great tasting and much better the next day.I added more chocolate chips, but don't try and do this because it makes them cook weird with pockets of air. Also - *make sure you have good quality cupcake papers or else the muffin will stick to the paper*... That is what happened to me. Add vanilla extract for better flavor!

Best Peanut Butter Cookies Ever

Reviewed: Oct. 18, 2009
This is the first time I made peanut butter cookies, but they seemed flat and dry. Either way they still tasted good. I think my preference is just soft cookies. *don't press down on the fork too hard* because it cracks the dough and makes the cookies way too flat.

Pumpkin Gingerbread

Reviewed: Oct. 18, 2009
This is the first time I ever made bread and it is very easy... It filled my apartment with delicious scents! The bread is moist, and it has a perfect amount of spice. I ended up baking it for an additional 20 minutes, but that could be because of my old oven. I used one glass pan and one aluminum. It cooks *much* better in the aluminum pan.

Swiss Chicken Casserole II

Reviewed: Sep. 29, 2009
I absolutely loved this recipe because it is easy, healthy and so very tasty. I sprayed the dish with butter cooking spray. I didn't have herb seasoned stuffing so I used regular seasoned stuffing cubes and added thyme, garlic powder & salt and onion powder. I also used half & half instead of milk. I only had one very huge chicken breast so I cut it in half and it was even great to just eat the gravy with stuffing & cheese when the chicken was gone. I think I might make it again this week with more chicken so we can have seconds. Thanks so much for this recipe. If I could give it 10 stars I would **********.

Ricotta Cheese Cake

Reviewed: Feb. 22, 2009
This recipe is EXCELLENT. When it is warm it tastes like Custard Pie and it is even better chilled. The only thing I changed is I added a splash more vanilla and it didn't even need the powdered sugar. I can't stop eating it and I usually don't eat cake!!! A+++++

Wow I have never had venison (and was hesitant to try it) and my husband has never cooked it. This recipe was perfect for us! He made mini burgers but didn't change anything. They were amazing and definitely a recipe we will have again.

Delicious! I did not add the shortening as suggested and they were amazing! Only difference is we used 60% cacao so the dark chocolate with the sweet strawberries were a perfect match. I will be making these more often! Yum!

Eggplant Tomato Bake

Reviewed: Feb. 6, 2009
This recipe was delicious! I took some of the tips and added basil and garlic salt to each layer. I think it would have been a bit tastier if the eggplant and tomatoes were soaked in the olive oil mix so the entire piece absorbed the flavor. Great recipe, will be doing it again for a side dish or appetizer!

Spaghetti Squash I

Reviewed: Feb. 4, 2009
This dish was delicious! I'm not a huge squash fan but with spaghetti squash it absorbs the flavor from the sauce its mixed with. My husband and I both loved it and the mixture of onions, garlic, basil and tomato would make a great glaze for many different meats or chicken. Yum!

Banana Pumpkin Bread

Reviewed: Oct. 27, 2008
Yum!!! I didn't have any pumpkin so I used butternut squash. This was a great recipe to use up my yucky bananas. Neither the banana nor the butternut squash were too overpowering. I saw that many of the reviews said it was really mushy so I replaced the honey with sugar and I made muffins instead of bread. The mini muffins took about 15 minutes and the regular muffins took about 22 minutes. I iced the muffins with powdered sugar and milk glaze and I added about a half a bag of mini chocolate chips. This might just be a new autumn tradition.

Chicken and Lentils with Rosemary

Reviewed: Oct. 27, 2008
The chicken was very good and the kids even at it-amazing! But there was way too many lentils for 4 servings. Next time I will cut the lentils in half. But very yummy! Also, I think it would be good with smaller pieces of chicken, like drumsticks and wings, or maybe just chunks of chicken.

Mediterranean Stuffed Chicken

Reviewed: Apr. 24, 2008
I absolutely loved this recipe. It is similar to one I used to make but much better and easier. I changed it slightly. I mixed the butter with the Feta and cream cheese. For the Feta, I used both plain and herbed Feta and added a little extra because I love it. I held it together with toothpicks because I didn't have cooking string. I sprayed the top with butter flavored Pam and sprinkled garlic and Paprika on top. When it was almost done I just broiled it slighly to crisp the skin. Everyone loved it and I will make it often! Thank you.
