Chocolate-Chocolate Chip Bacon Cookies

Everyone loved this but the minute I said bacon they made a funny face, I almost had to talk some people into eating it, but once they did they enjoy it. Also my niece, who hates chocolate gobbled these down. I did use 8 slices of regular bacon, I just added a little maple syrup to the batter. This is a great way to use up some left over bacon. I will make these again.

Crumb-Coated Chicken Thighs

This recipe is so simple is SO delicious! My husband LOVES it! He is Jamaican and he says it reminds him of his mothers curried chicken. I will definitely make this again

Golden Rum Cake

WOOOOW! Followed cake and rum glaze to the "T"! Poked holes in the cake after cooling for ten minutes as recommended by others, and then poured rum glaze over. Allow to soak in and transfer to a plate. I made a glaze with approx one cup of powdered sugar, couple tablespoons of water, tablespoon of rum, drop of almond extract, and enough corn syrup to thicken and harden when drizzled onto cake. Yummy!!!

Broiled Tilapia Parmesan

I normally find Tilapia just ok, and have never found a recipe that wowed me. Well... this was amazing and gets a WOW! The coating is so good and the dish is so easy. I added bread crumbs as suggested, and sprinkled the fish with a Parmesian Herb seasoning that I found in my spice cabinet, really yummy. Otherwise, kept the recipe as is. This one is a keeper!

Caroline's Chocolate Fudge Frosting

This has got to be the worst chocolate frosting I think I've ever tasted. I made it according to the directions, and it hardly had any chocolate taste to it, so I added another two squares of unsweetened chocolate & a little more confectioners sugar. After adding more chocolate, it did taste more chocolatey, however, something's just off with the taste...sort of like a tiny bit burned. That being said, I used the unsweetened chocolate squares & melted them in the microwave with the butter. It didn't look or smell like it, but could I have possibly burned the chocolate a tiny bit? If that's the case, then I apologize for my 1 star review! I will give this recipe another chance the next time I make frosting, but will melt the chocolate over a double boiler & see if that makes a difference.

Frosted Banana Bars

These are sooo good! This is the banana cake recipe I have been craving. I used light sour cream, three bananas (based on other suggestions), baked in a 9x13 glass dish for approx 40 minutes (started checking at 30 minutes), and topped with the Whipped Cream Cream Cheese Frosting from this website as suggested (used 1/3 less fat cream cheese). And of course, refrigerate. Made this again last night for the second week in a row, at hubby's request (who isn't a banana person!).

Baked Teriyaki Chicken

Great recipe! I omitted the ginger (personal preference) and used dried minced garlic as a time saver. If this effected the flavor, I didn't notice, it's already on next week's menu. I made this with a macaroni salad because it was leftover, but next time I'm serving with rice because the sauce is so good.

Marinade for Chicken

This marinade was good, easy, AND inexpensive! Just as Jillypooh said, they are ingredients most people have on hand. I did change the serving size to 8, and it was just about perfect for six boneless chicken breasts that I cut in half for quicker grilling time. I will definitely be using this marinade again. Oh, and I did marinate overnight.

Southwestern Egg Rolls

Love the flavor of this recipe! I double all ingredients and prepare exactly by the recipe up until step 5. I still use tortillas and warm in the microwave, but once I fill... I eat. Although I love fried food, I try to stay away from it when cooking at home. And even though I know some people baked, I just can't wait that long. These are so good I want to eat right away.

Grilled Salmon I

This is awesome! I change nothing, recipe stays as is. My husband accidently blackened one side a little too much the first time he grilled (maybe because of the brown sugar?), and it was still amazing! I don't think you can ruin this. Five stars all the way.

Chocolate Cavity Maker Cake

This is one of my favorite cakes to make, it's quick/easy and tastes amazing. When we have work luncheons, I am always asked if I'll be bringing. No one ever gets sick of it and people end up sneaking an extra piece to bring home. Love Love Love this recipe.

Chocolate Banana Bread

I love this recipe. Anytime I have extra bananas, this gets made. Sometimes I'll halve the recipe for one loaf, other times it will be as written and I'll make one 9x5 loaf and four mini loaves. Remember the mini's cook quicker, but it just means you can eat that much quicker!

RamJam Chicken

This is my go to chicken recipe when I need a dinner with little preparation. I omit the ginger (personal preference, not a ginger fan), and use garlic powder in place of the crushed only because it's a time saver. Marinate overnight and the next night grill chicken breasts skipping the skewers. The smell while it's on the grill will make your mouth water, and of course the best part, tastes great. Goes well with any side.

Spicy Black Bean Potato Salad

This was an amazing change to the Potato Salad we all know. However, next time, I'm substituting the potatoes with macaroni for a Macaroni Salad. Awesome recipe. ***UPDATE*** Omitted the bacon, doubled the black beans, cut the mayo back to 1 cup, and substituted the potatoes with macaroni. Now this is my favorite Potato AND Macaroni Salad!!
