I am an East Coast person but have lived in Arizona for 50 years with a short stint in Southern California in 2003. I have a husband, a married son who lives near, and four cats who "Help" me cook. I love to "Live" in my kitchen and I find that most visitors end up migrating to the bar stools in the kitchen. I start my day there and usually end it there. I have a very small laptop in the kitchen counter that holds nothing but recipes. I have a nine cookbooks that were handed down to me from grandmothers but other than that, everything is in the computer.

Golden Rum Cake

WOOOOW! Followed cake and rum glaze to the "T"! Poked holes in the cake after cooling for ten minutes as recommended by others, and then poured rum glaze over. Allow to soak in and transfer to a plate. I made a glaze with approx one cup of powdered sugar, couple tablespoons of water, tablespoon of rum, drop of almond extract, and enough corn syrup to thicken and harden when drizzled onto cake. Yummy!!!

Broiled Tilapia Parmesan

I normally find Tilapia just ok, and have never found a recipe that wowed me. Well... this was amazing and gets a WOW! The coating is so good and the dish is so easy. I added bread crumbs as suggested, and sprinkled the fish with a Parmesian Herb seasoning that I found in my spice cabinet, really yummy. Otherwise, kept the recipe as is. This one is a keeper!

Caroline's Chocolate Fudge Frosting

This has got to be the worst chocolate frosting I think I've ever tasted. I made it according to the directions, and it hardly had any chocolate taste to it, so I added another two squares of unsweetened chocolate & a little more confectioners sugar. After adding more chocolate, it did taste more chocolatey, however, something's just off with the taste...sort of like a tiny bit burned. That being said, I used the unsweetened chocolate squares & melted them in the microwave with the butter. It didn't look or smell like it, but could I have possibly burned the chocolate a tiny bit? If that's the case, then I apologize for my 1 star review! I will give this recipe another chance the next time I make frosting, but will melt the chocolate over a double boiler & see if that makes a difference.
