Penne with Garlicky Broccolini

Lovely recipe, however I did make some alterations due to personal preference. I don't like bacon and had a ton of chicken breast in the fridge so I used that as the meat instead. I used garlic flavored EVOO to makeup for the lack of fat juice without the bacon. I also followed others advice and used regular broccoli and added grape tomatoes as well. Very delicious, my boyfriend raved all night!

Pepperoni Bread

This is pretty good...if you like the idea but not the spiciness or the pepperoni, it's OK to just make "Cheesy Bread". Seriously, I've done that, and it's amazing. You can use your favorite melting cheese, too!

Angel Hair Pasta with Shrimp and Basil

This was good and tasty. I gave it four stars though because 1) I added a little salt and pepper to taste and 2) I ended up adding back the tomato liquid to the reduction. I thought it was too dry as it was cooking for our tastes (I have two kids (and a husband) who wouldn't just eat the chunky tomatoes -- they need sauce). But fresh parsley and basil and extra garlic, as other reviewers mentioned, made it very flavorful.

Cream Cheese Frosting II

Excellent. Made exactly as written and it was the perfect consistency for frosting, and tasted rich and creamy. Sweet enough, too, but you could still get the tang of the cream cheese. Put on a triple chocolate cake -- yum. Next time, I'll put raspberry between the layers to complement the cream cheese and chocolate tastes.

Mom's Zucchini Bread

Did what others suggested and used w/w pastry flour and 1/2 brown sugar and extra zucchini. Excellent -- moist and very flavorful. My son couldn't get enough (I made bread and muffins as he prefers muffins)! Thanks for the recipe and tips.

Vegetable and Feta Latkes

These were excellent and a nice change of side dish vs. rice or same old potatoes. My Dad and I loved them although my kids saw through my ploy to get them to eat zuchinni (as did my husband). Even better the second day when the flavors really set (but not after that; tried for three in a row and by the third day they were getting a little tired).

Fresh Tomato Salsa

This was great. I did not add the hot peppers though; my crowd prefers mild salsa. The fresh tomato with fresh cilantro is awesome. I didn't add any garlic; just what the recipe calls for.

Mesclun and Mango Salad with Ginger Carrot Dressing

Very nice salad. I cut the sesame oil by a bit as suggested by other reviewers and used fresh mesclun from the garden (although I didn't have fresh ginger). As others did, I think it would be great on spinach, too, with a little bit of red onion.

Zucchini Soup I

This was good--I served it chilled but I think it would be better warm with a nice crusty bread. Also, I froze a portion of mine for a mere week and when I defrosted it, it was just NOT the same. Anyone freeze it successfully?

Grilled Sea Bass

Spicy Grilled Shrimp

This is one of my DH and my favorites--gives the shrimp a nice flavor, has a little kick and is perfect for the grill as the shrimp get a tiny bit crunchy on the outside. Perfect in warm weather. Don't serve to spice-phobes...we have one in our family who thinks pepper is too spicy so he won't eat this. His loss--more for us!

Gingerbread Cookies I

Delicious, soft, chewy and moist. I also did not have lemon extract; I used imitation almond instead. And, I made them as drop cookies instead of rolling them. Both my kids loved them, as did the neighbors' kids. They asked for more! They also freeze well (mine were only frozen for a couple weeks, as they were in demand again!).
