Spicy Chipotle Turkey Burgers

If it were up to me I would have rated this recipe a 5 however my boyfriend didn't like them much at all. He isn't into spicy food so you must like a little heat to enjoy this recipe. Tasted wonderful with mozzarella cheese on top.

Penne with Spicy Vodka Tomato Cream Sauce

OMG amazing! No vodka sauce can be made correctly without a little pancetta so I cooked about 7 slices before adding 2 small links of hot italian sausage. I followed the rest of the recipe as is except I added a little extra cream and vodka as I like more sauce in my pasta. I also added a few sprinkles of parm cheese while cooking in the last leg. Came out amazing! A+ recipe thanks!

Quesadillas II

Very good recipe, I made recipe with and without adding the salsa to the chicken and both are good. I serve with Amys Cilantro Cream Sauce from this site (its delish!) Thanks for the recipe, I find baking them turns out much better than just flipping on a frying skillet like other recipes call for.

Spinach Enchiladas

They are alright, however I don't think the taste of Ricotta goes well with the Mexican tastes. Maybe if there were something a little more solid in them such as steak or chicken I may feel different, however the spinach just soaked up the ricotta and made the enchiladas very mushy.

Very Good however I would prefer this delicious sauce with extra blue cheese added at the end (so that it doesnt melt down all the way) and I think it would go better with a great steak!

Southwestern Egg Rolls

Great recipe! Filling is delicious and would be great as a filling for other Mexican dishes as well. I don't recommend using Spring roll wrappers as others had tried. When I used them they were entirely too thin and hard to manage. Horrible texture (slimy when trying to fill them). Tortillas gave a better mexican taste and texture! I also baked instead of frying to keep down calories/fat.

Roasted Pork Loin

I marinated the loin in the seasoning about 2-3 hours beforehand. I added slightly more wine (and added before baking). I also threw in some large pieces of onions, mushrooms and garlic cloves that I had on hand. Very moist and tons of flavor!

Simple Chicken Parmesan

delicious! I only used a pinch of sugar in the sauce as I don't like sauces sweet. I also added diced tomatoes for a slightly chunkier sauce. Added garlic powder to breadcrumb mix as well. One of my boyfriends favorite recipes I have made!
