This is a delicious cookie! To make them healthier, I substituted yogurt for half of the butter and used whole wheat flour. I also only used bittersweet chocolate chips because those were the only kind I had. This is a really rich, really good cookie. I brought them to a party and everyone loved them.

Shiitake Angel Hair Pasta

This has become one of our favorites. I change the recipe just a bit:.....I use red cooking wine when cooking the onions, garlic and mushrooms.....I sometimes add finely sliced leeks.....I only use vegetable broth and more broth than is called for as I always find the pasta absorbs so much liquid that it could become dry.....at the end of cooking I'll add pine nuts and then once the sauce is poured over the cooked pasta I'll put a generous portion of shaved Asiago cheese on top. Even my 9 year old likes this recipe. I'll make this one without fail.

Chocolate Decadence Cake I

What a deliciously decadent cake! My husband could hardly keep from eating the whole thing. I had no problems with beating the whole eggs in my Kitchen-aid mixer. This cake went together in less steps than other flourless cakes I've made. The heart shaped pan I used was slightly smaller than what was called for so I put the leftover batter into ramekins that took slightly less time in the oven than the cake and shared them with our neighbors on Valentine's day. 8 people were unanimous...I'm to make this again!

Buffalo Chicken Fingers

Sweet 'n' Hot Glazed Salmon

Really nice and easy recipe. I think that I did not cook down the sauce enough, but it was Fabulous with white rice !! I added more cayenne as others recommended and the kids thought it was spicy, mom thought it was great, and I thought it needed more. All in all a defininte Do-again, next time I'll try it on the grill !!

Orange Pumpkin Loaf

This bread smells really good!!! I took off one star because I didn't really like having the orange in there. I was hoping the texture would be more bread-like. It's just a little too fudge-like for me.

Turkey Broccoli Bake

Chicken Caesar Pasta

This was good,not a blow me away taste. I took it to a family party I only had a very little left over. Was very different and a made a nice side dish, not too heavy and didn't get soggy at the buffet table. I would have liked to have the chicken to have a bit more flavor. Next time I think I'll marinate the chicken in ceasar dressing. Thank you.

Bacon Wrapped Barbeque Shrimp

This one was a winner, all of the flavors came together nicely. We used Sweet Baby Ray's sauce on them. Cooked for 12 minutes & then broiled for about 2 min to crisp up the bacon.

Crab Stuffed Flounder

I liked it, my wife was so so on it. I added the Old Bay like everyone recommended, but I guess I didn't add enough. I will definitely try to make it again with some more spice and possibly a different fish that has more flavor.

Cottage Cheese Bread II

Great bread!!! The texture is definitely different, almost chewy. You can't really taste the cottage cheese, but its texture is there. To make it a little healthier, I used white whole wheat flour and added 1/4 cup of gluten. I also substituted yogurt for the oil. I'll definitely make this again, especially since there's still cottage cheese in the refrigerator!

Gingerbread Men

WOW!! The best gingerbread cookie I've ever made. Not good for houses-too soft but as a cookie perfect, easy to make, stores well & freezes well. Made a triple batch then had to make another double batch just before Christmas since my family kept sneaking them before I made up my cookie trays. People are calling me raving about the gingerbread men- Thank you!! This is surely a keeper!

This was a really tasty "pancake." It didn't really rise much, but then again I omitted the butter completely. That might be why. To make it healthier, I substituted whole wheat flour, twelve egg whites instead of the whole eggs, and seltzer for the milk. I also used fat free cheddar cheese.

Peanut Butter Pumpkin Bread

This was a nice, mild bread. It didn't have a strong pumpkin taste, or a strong peanut butter taste for that matter. Still I thought it was pretty tasty. I substituted yogurt for oil and decreased the sugar to 2 cups.
