What a great, solid recipe- the cake has a wonderful moist texture, and the cream cheese frosting complements it well. I made these as cupcakes, baking at 350 degrees for 25 minutes; made good-sized 20 cupcakes. This may be my go-to carrot cake recipe from now on!

Irresistible Irish Soda Bread

The bread got rave reviews at St. Patrick's Day dinner. It was done at about 50 minutes, so make sure you check early.
