'I held this velvety, rich cake on my lap during the 4-1/2 hour drive to the Greatest Cocoa Cake Contest at the Pennsylvania Farm Show last January,' recalls Sandy Johnson, who lives on a dairy farm near Tioga. 'By the time we got to the judges table, I was almost too tired to care if I won.' But win she did! Topping 59 other entries, Sandy's impressive layer cake with creamy frosting took first place!

This is a wonderful double-crust pie piled high with fresh raspberries. The berries are sugared and sprinkled with tapioca and cornstarch, and arranged in a prepared crust. Pats of butter go on just before the top crust is added, and then the pie is baked until the juices bubble up and the crust is golden brown.

If you want perfectly fluffy, whipped cream icing, this is the recipe to use. Unflavored gelatin performs the magic. It 's softened in water and poured slowly into the cream as it 's being whipped. This makes a splendid topping for a strawberry pie or the quintessential icing for a three-layer chocolate cake.

After a mad search on the net for a recipe for this sauce I had to create my own. This can be reheated in the microwave without the usual cream sauce defects. I just love the light green color and how well it displays over tri color or regular pasta, salmon and grilled chicken. I have been putting this on everything.
