I was looking for a linzer-type recipe and decided to make these with my Christmas assortment last year. They were by far the favorite! Used Raspberry jam and added 1/2 tsp vanilla to batter. So simple and delicious. I had to make a second batch to take home to the family - the first batch was devoured quickly! I'm planning on taking these to my cookie exchange this year. Enjoy!

Tilapia with Creamy Sauce

I changed this a lot. Added a breadcrumb crust tsp butter melted a few tbs bread crumb fresh grated romano and dill, sprinkle on top. Lemon to taste in all, thinned cream cheese sauce with cream, make sure you season fish well (salt pepper dry dill lemon butter). Cooked for 20 minutes, would have been raw otherwise. Then broiled for 5 minutes to brown crust well. Big hit after adjustments.

Wine Cookies (Original Italian)

Sorry, didn't care for these at all. I may have done something wrong, though I followed the recipe to the T. Even my Father, who seems to like everything, thought they were just "ok". Even threw out half the dough because I knew something just wasn't right.

Popcorn Cake I

This was sooooo good! It was so easy to make and took very little time! I added crushed pretzels too. Also, after removing from the pan, I melted dipping chocolate, poured it over the cake, and let sit until it hardened. Major hit!!

Spinach Stuffed Chicken Breasts

I loved it. After wrapping the chicken in bacon I pan fried the bacon so the chicken absorbed the juices, then I baked it. It was wonderful.

Cream Cheese Squares

The filling was great. I will try these one more time, but I will change the amount of butter( I havn't used margarine in years)to about 1/2 and will use unsalted butter. In my opnion, the butter was just too heavy, and I like rich foods. The salt in the cresent dough, and the salt in the butter ganged up, and produced a cloying quality. I like the concept of the cresent dough and the filling, this just needs a little lightening up.

Old Fashioned Beef Stew

I haven't made this, but I had to comment, because it's the first time I've seen the combination of bay and allspice in a stew other than in my own stew! I make a traditional stew with these spices. If you don't like this specific recipe, keep the spices in mind for your favorite version of stew, give them a shot- for thirty years I've gotten rave reviews from fiends and family!

Magic Spice Cake

This cake was wonderful and gone in no time. I made it for my fiance to take to work and someone took the leftovers home. The icing I made also came out wonderfully and I got many compliments o this cake. I would like to add a little more spices next time to get even more flavor. Whipped cream icing is wonderful on it!

Creamy Peach Pie

Made this for my fiance and he said it was incredibly delicious - a five star pie. I used 1/2c of cream and the pie set beautifully as it cooled. I did not refrigerate it. I added an extra 1/4c of sugar to the peaches and about 3/4-1t. of nutmeg. A fabulous recipe I will make again!

Indian Tandoori Chicken

This chicken came out phenomenal! I baked it in the oven on 450 for 30 minutes. I omitted the food coloring, too. It was tender and moist and bursting with flavor. I added extra cayenne because I like things spicy. Very enjoyable!

Raspberry Pie I

This pie was absolutely fantastic! I had to substitute fresh blackberries for raspberries because the grocery stores were out of fresh raspberries. My fiance loves pies and he said this one is a definite winner. I agree - I love anything with berries. GREAT with vanilla ice cream. Delish!

Veal Marsala

Heavenly Chocolate Mousse

I made the mousse and put it in a chocolate cookie pie crust and it was absolutely divine. The mousse was light and fluffy and very creamy and the pie crust added a delicious crunchiness. It firms up beautifully in the pie crust for a perfect pie. I highly recommend this recipe - it is one of the best I have yet to try! Five stars all the way!

Apple Pie I

My fiance loves apple pie and he said this pie was OUT OF THIS WORLD it was so good. He practically inhaled it. I sprinkled some vanilla over the apple/sugar/cinnamon and I used 1 cup of sugar instead. I also used more butter - I placed pats of butter on top of the filling instead of little pieces. The thickness of the sauce was beautiful WITHOUT flour. There is nothing better than homemade! Definitely a five star recipe that can be modified to how you like it! Next time I will use some nutmeg and ground cloves. A winner if I ever made one!

Stabilized Whipped Cream Icing

I used this variaton and it was perfect!!! ~2 teaspoons gelatin, 4 teaspoons cold water, 1 cup heavy whipping cream, 1/4 cup confectioners' sugar, 1 teaspoon vanilla extract.... Combine gelatin and cold water. Whip the cream, and add confectioner's sugar. Add gelatin mixture and vanilla extract. Continue whipping until the gelatin is incorporated. Lovely firm texture and beautifully spreadable. I stuck it in the freezer for a short time to firm the icing a little more. It came out splendidly!

Basil Cream Sauce

This was amazing. I used heavy cream instead and more garlic. I also garnished with more pine nuts. I will be making this a lot. I love basil and this is fragrant and well infused with the best kind - fresh basil! So good I was eating it before I put it on the pasta!

Thai Chicken Balls

These were tasty and delicious! I added some minced fresh ginger and garlic and one egg to help the meatballs stick better. Also, I used spicy Thai chili garlic sauce. These would be great with some sesame oil dipping sauce. Definitely worth making!
