All-Day Apple Butter

So good and so easy. I used half the sugar. I blended it with my hand-held blender when it was done cooking. Will definately make again.

Spinach Phyllo Cups

Delicious! I added some sundried tomato and a little bit of basil. Yummy! Very quick and easy. I just took them to a party and got lots of compliments.

Raspberry Lemonade Biscotti

I thought these had a very nice, subtle flavor. I used a little less sugar and 2 eggs. I don't have a fine strainer, so I used pantyhose to separate the raspberry juice from the seeds. Kind of messy, but it mostly worked. I'd like to try these again using preserves.

Banana Frittata

I didn't have a nine inch non-stick pan so I used the one I do have which might be about 6 inches. In that case, I made a few small frittatas this way. I also mashed the bananas before adding them to the mixture. I tried the recipe with banana slices too and I think either way is fine, it is a little more challenging to flip with the slices, but not impossible, maybe that is because mine were generally smaller frittatas than the recipe calls for. The flavor was good, it was kind of like a big pancake. For my picture I used a pizza cutter and made a square and a "checkerboard" design with Hershey's syrup, some mixed frozen fruit, and whipped cream. Overall, it was pretty good, would make it again.

Crustless Spinach Quiche

Super good! Really easy and quick, too. I usually make spinach pancakes from this site, but tried this for something different. I only had 4 eggs and also used a blend of shredded mexican and shredded mild cheddar. I DID have one slice of swiss cheese so I made that slice into 4 triangular pieces and used that for a topping. I also added a dash of nutmeg and about 3/4 tablespoon of paprika to the mix. Plus I browned minced onion in butter rather than the oil. My new favorite dish!

Raisin Surprise Pudding

I used unsweetened applesauce instead of butter and substituted some molasses for some of the brown sugar I was short on. This is the first time I've made anything like this, but my husband and I both liked it, although he said it was a little too sweet for him. I did serve it warm with cool whip like the recipe suggests. Overall, good treat.

My Grandma's Shoo-Fly Pie

I live smack in the middle of Amish country. I followed the recipe and had no problems at all with over flow. Crumbs do not need to be mixed in. If you want a truly "wet bottom" shoo fly pie this is it. This recipe is comparable to the pies that are sold at the Farmer's markets in this area by the Amish and Mennonites. Great recipe!!! Thanks.

Bubble Tea

Such a neat drink idea! I could only find small tapioca pearls but I used the chai tea mix from this site BUT I was not able to find powdered, unsweetened tea mix so I just brewed some regular tea and mixed the chai mix and tapioca in. Lots of fun. I can see how this would be good with bigger pearls and a big straw.

Banana Spice Cookies

I chilled the dough overnight and they turned out great the next day! I also put the bananas in a small chopper when I was mixing everything together. The cookies aren't overly spicy or banana-y, which is nice.

Cheddar French Toast with Dried Fruit Syrup

The bread I used was very soft, fresh bread and it was a little challenging to make pockets for the cheese. I would use day-old, or so, bread next time. I also used canned mixed fruit (chopped) instead of the dried fruit. Really filling and very good!
