Super easy and very tasty! Chicken was very moist. Served with a broccoli and penne side dish.

Stuffed Green Peppers I

Reviewed: Nov. 1, 2009
These peppers turned out great! I would give it 5 starts, except I made some changes. I didn't boil the peppers beforehand; I just increased the time in the oven. Used 1/2 cup of onions. Cooked my rice in a rice cooker, mixed it with everything else and let it simmer for about 10 minutes to let the flavors mix. I added cumin, red pepper flakes, salt, pepper, italian seasoning and extra Worcestershire sauce to the mixture. Also used a can of diced tomatos with green chiles in them for an extra kick. I followed other reviewers' advice and put sauce and cheese in the bottom of each pepper, added some of the mixture and then did another layer of sauce and cheese and then finished stuffing the pepper and topped with more cheese. I used tomato sauce instead of tomato soup (don't care for the soup flavor). Coated the bottom of the pan with a layer of tomato sauce to keep the bottoms of the peppers from burning. Served over white rice. Delicious; will definitely be making again!!

Toasted Pumpkin Seeds with Sugar and Spice

Reviewed: Oct. 25, 2009
This turned out really well! I didn't have any pumpkin spice, so I just added a little bit of canned pumpkin, which worked out well.

Acorn Squash with Apple

Reviewed: Oct. 21, 2009
My boyfriend and I were splint on this one. I thouht the flavor and the apples were great, but couldn't get too excited about the acorn squash. I'd never had acorn squash before so I guess it's just not my thing. I did add an extra tablespoon of brown sugar. My boyfriend also suggested that I chop the squash and apples into smaller pieces so that you get more of a melding of flavor in each bite. He loved it, so I'll be making again I'm sure.

Mexican Rice II

Reviewed: Oct. 21, 2009
I was so happy to find this recipe! I LOVED how it turned out and my boyfriend enjoyed it as well. I've made it a couple time and never make it quite the same each time. I always add 1/8 tsp of ground cayenne pepper because we like things spicy and helps to give a bit more flavor to the rice. I also add some fresh minced garlic, a little black pepper as well and double the cumin. I've also added diced green peppers and added some cubed chicken at the end to make this its own meal rather than a side dish.

Apricot Glazed Chicken

Reviewed: Oct. 20, 2009
I made this for dinner for me and my boyfriend one night and we loved it! I did cube the chicken and followed some of the suggestions of other reviewers. I marinated the chicken in soy sauce and chicken broth for about an hour and a half before cooking. Also added a bit of lemon juice, cayenne pepper and onion powder. I used 1 cup of apricot preserves instead of 3/4 for a little more flavor. Skipped adding more soy sauce while making the sauce. Served over white rice with steamed asparagus. Will definitely make again!

Lemon Sauce for Salmon Patties

Reviewed: Jul. 13, 2009
This sauce was very good. The cayenne pepper is an interesting touch and adds just a touch of spiciness. Don't judge it before you eat it with the salmon!

An excellent recipe! I followed the recipe exactly and they turned out great. My father practically licked his plate! They did fall apart, but that's only because I over flip. I served them with "Lemon Sauce for Salmon Patties" submitted by BABSKITCHEN.

The Best Lemon Bars

Reviewed: Jun. 28, 2009
This is a great recipe! With a few changes, so I could make it at work, this is one of my most requested desserts. I did double the filling though and add a little more lemon juice. I, personally, don't like sweet lemon flavor. It was a big hit!

I will definitely make it again. I skipped the cheese since I have picky eaters and they still turned out great. Not the best I've ever had, but very good for how simple it is.

Awesome Carrot Cake with Cream Cheese Frosting

This is a tasty recipe, but it uses way to much oil. Cut the oil in half and add some buttermilk or yogurt to replace the moisture loss. Good otherwise.

Gramma's Apple Bread Pudding

This bread pudding is WONDERFUL!! It is exactly like the Apple Bread Pudding from my favorite restaurant! I just double the warm vanilla sauce and try not to eat the whole pan! I have used homemade bread and it makes it even better, if thats possible. Great recipe!
