Double Tomato Bruschetta

Loved this recipe! I did make it a little easier and spiced it up a bit. I used 2 cans of diced tomatoes with green chilies (drained) in substitution for the 6 romas. It was easier than cutting up the tomatoes and added a little heat to the bruschetta. I plan to add a small can of olives next time for another twist!

Tortellini a la Carbonara

I made this recipe for myself and my boyfriend. I used half heavy cream and half light cream, as I had some that I wanted to use up. I also added garlic powder to the sauce, because I didn't have any fresh to saute with the bacon. We loved it, and have been eating it for the last couple days, as it's more than enough for 4 people.

No Sour Cream Beef Stroganoff

This was very good, and easy, despite my picky boyfriend not wanting ground beef. I subbed top round, thinly sliced. I ditched the salt, because I used white cooking wine which is very salty. I did shop specifically for this recipe, so I found myself wanting (and lacking) a little bit more beef stock while it was thickening. I used water, and it seemed okay. Thanks for sharing!

Super-Delicious Zuppa Toscana

This soup had incredible flavor. I was so impressed. I did like it much better than the Olive Garden verson. I also used part chicken broth and part bouillon. Worked beautifully. I also used frozen chopped spinach because I had no fresh on hand. Had it as leftovers today and is even better than the night before!

Crinkles

I like these cookies around Christmas time and make them, plus other cookies. I use Hershey's cocoa (or any other type is fine as well) instead of the squares. That way you don't need to worry about melting chocolate. I also add an additional 1/3 c. for the flour and 3/4 c. for the oil instead of the 1/2.

Granny Kat's Pumpkin Roll

WOW! Didn't change a thing and it was perfect. Just a tip, I lined my baking pan with parchment paper and sprayed the sides with non-stick cooking spray...chilled the cream cheese mixture before spreading it onto the roll so it wouldn't ooze out the sides.

Classic Bangers and Mash

Ok, I really played with this recipe...but gosh, it is such a good comforting meal! I grilled my sausages and made my own beef gravy with stock I thickened up. I uses Emeril's cheddar, onion mashed potatoes and let me tell you...this was better then anything you'd get in a pub! Delish!!!

Very good, I soak mine in cold ice water for at least an hour, and then do the double-fry method. When finished I usually season the with Seasoned Salt.

Glazed Meatloaf I

My husband totally loved this recipe...he is a fan of the classic meatloaf, and we were not disappointed with this recipe. I think the only changes I made was a couple of dashes or Worcestershire sauce and minced garlic. It was perfect with some good old fashion mashed potatoes.

Cheddar Ranch Dip

Wow, I had so many requests for this recipe after I made it for a holiday party. I too used real bacon and crumbled it, finely shreadded cheddar cheese, 2 finely chopped scallons, and used the Ranch seasoning to taste so it wouldn't be too salty! Everyone loved it!

Easy Chicken Enchiladas

This was wonderful...loved that it was so easy...came together in 20 minutes. I boiled the chicken in salt water and shredded it. I added my homemade salsa (which has a small kick) and substituted black beans for pinto..I would highly recommend salsa with some heat..otherwise, I would add a shot or two of hot sauce to the filling. Excellent! The entire family loved it!

Corn Fritters

Ok, I just made this recipe...I used 3/4 cup of flour and 1/4 cup of white corn meal, and doubled the sugar...and I have to say they were awesome...golden brown on the outside and light on inside just bursting with with corn flavor.

Fresh Asparagus Soup

This was a wonderful flavored soup!! I used chicken broth and milk products instead of soy. Even with skim milk it was creamy and delicious! My only problem was the asparagus was stringy. I even cooked it very well and used my emulsion blender. I would try it again for sure!

Roast Sticky Chicken-Rotisserie Style

I made this for dinner last night. It was very good. I believe next time I put the rub on and let it sit for 24-48 hours. My dh and I were amazed that there was one flavor on the outside and it was very different on the inside. It needs more time to all come together. I made it beer butt style with red wine in the "cavity". I then added the red wine to the drippings to make gravy. WOW! It was amazing! I wasn't sure what the red wine would do but it was awesome!!!

Very nice flavor. I added 1 small can of corn drained and used black beans in place of the light kidneys. I also used and entire onion and 1/3 cup of chopped red bell pepper. The entire family loved it.

Such a simple, yet classic recipe! I used less butter, and added in some crushed red pepper flakes and topped with fresh grated parm-reggianno cheese, it was a great side dish to florentine stuffed chicken breasts!

Big Al's K.C. Bar-B-Q Sauce

I do wish I could give this more stars...I made it for some old fashion finger licking good baby back ribs and I was sooooo not disappointed. I froze my leftover sauce and used it on grilled chicken, I think it was even better the second time!

Brunch Pizza Squares

I just used a roll of Pillsbury pizza dough, added some sauteed mushroom and onions, and it was a pretty tasty breakfast for the family. I like making "one dish" egg recipes, rather then trying to do 5 individual egg requests.
