Sweet and Sour Beetroot

This was my first experience with fresh beets, and I'm pleased with how they turned out. Here in amish country we must grow things big because the beets took closer to 30 min to cook. I didn't have malt vinegar, but read other reviews and decided to try with cider vinegar- when I reached for the bottle, realized there was only about 1Tbsp in it, and resorted to white, and cut back to 4Tbsp of the vinegar- I tasted the sauce/juice and it was still on the sour side, so just added an extra Tbsp of brwn. sugar. Rated 5 stars because I'm sure if I had the apple cider or malt vinegar, that the sour and sweet would balance! Good recipe despite my purple fingers!!!

Eggplant and Tomato Bake

I rate this 3 stars for a few reasons. It tasted just fine, and for the calories and nutritional value, it can't really be beat, but would I make this more than a few times a year, no. I did increase the sauce like many other reviews stated, but otherwise, followed the recipe. Mine seemed to get pretty runny- maybe from extra sauce, but seemed to just be watery more so than extra saucy. Like I said- good, but just good.

These turned out wonderful! I had a few sheets that got a bit over done though- so watch them closely!!! They go from not done to over done very quickly!

Low-Fat Blueberry Bran Muffins

Very Good especially for low fat and healthy!! Followed another review in beating egg white before adding, and muffins are light and have great texture! Perfect amount of sweetness. Will make again for sure!

White Chocolate Blondies

I just made these this afternoon and I've already had 2! They're soooooooo good!!! The only change I made was using a mix of white and semisweet chocolate chips at the end instead of just plain semisweet and they turned out great. I'm really not sure why other reviewers say that using white chocolate chips instead of white baking chocolate doesn't work for this...I used store brand chips and these are delicious! They melted down fine in a makeshift double boiler (glass bowl sitting over a pot of boiling water)and the cleanup wasn't bad at all! I'll definitly make these again and again!

Bahama-Mama Pork Chops

We really enjoyed this recipe. I think the next time I make it, I will try marinating the chops for an hour or so In the sauce before I cook them to get them even more flavorful. Definitley will make again.

Chicken Cordon Bleu II

ABSOLUTELY TO DIE FOR!! I loved this recipe. I didn't have any paprika, so I left that out but I added some freshly ground black pepper to the flour before coating the chicken with it. I used a pinot grigio to simmer the chickeen in and i didn't have any bouillon granules so I used one bouillon cube, however it turned out a tad salty so i will reduce it to half a cube the next time I make this recipe. I served it over rice with some butter and lemon drizzled steamed broccoli and red peppers on the side. Everyone loved this and I will DEFINITLY be keeping this recipe around.

Rockfish with Crab and Old Bay Cream Sauce

I found this to be delicious. Unfortunatley, my fiance didn't care for it, but i think it was probably just the fact that he's not used to eating seafood with rich sauces (he's from Texas, I grew up on the east coast...our definitions of GOOD seafood are different). I used sea bass and just plain old bay seasoning. The stored only had blue crab meat so that is what I used. I served it over rice with steamed green beans. I really enjoyed it although if I make it again it will have to be for a different crowd.

Slow Cooker Lasagna

Okay... we're not picky people and are very forgiving of mediocre food but, this recipe was NOT good. Added extra tomato sauce like most of the other reviews suggest, and cooked it just about 5 hours. Noodles turned out like mush but more with the texture of glue. Should have just made the real thing- wouldn't have taken as long and would've tasted much better. Will not make again.
