About me:
I am in the final semester of my last year in college, majoring in Political Science at Indiana University of Pennsylvania (talk about a scary point to be in one's life!). Living in a house with 3 other guys, none of whom can cook, has certainly forced my cooking into new creative heights. I have to make healthy food (for me) that is still interesting and tastes good, isn't too "weird" (for the guys), and won't bankrupt our house's food budget (sorry, Mario, we can't all get our food airlifted from some remote village in Italy).

Mom's Coleslaw

I made this ages ago, but I still remember how tasty it was! It's just the right mix of sweet and tangy! Mmm! Reminds me of the cole slaw at Red Lobster... I made it for my fiance's family. They are british and their cole slaw is different. Oniony, no sweet/tangy flavor, just mayo. Yuck. Thanks to this recipe I have opened their eyes.

Scalloped Potatoes I

I tripled this recipe and also added about one cup of light sour cream and almost one cup of half and half, which did make the soup mixture very creamy and easy to spread on top of the potatoes. I kept the foil on for the first hour and then took the foil off for the last half hour of baking - it took longer cause my pans were very full. Also added lots of black pepper and a bit of garlic powder. Thanks for this great recipe.

Cream Cheese Squares

I used low fat cream cheese and splenda. I thought there was lot of filling and there was way too much butter/margarine. Also, my cooking time took over 15 minutes more than stated. Not sure if they were wonderful, but they were good. Thanks for the recipe.
