Asparagus Avocado Medley

Reviewed: Mar. 9, 2009
Very good way to get some of my favorite veggies in one meal. I did roast my asparagus, and sauteed all the other veggies except the avocado and tomato. Personal preference, I just don't like raw veggies. I halved the thyme in the dressing as I don't care for that spice. It was a very good combo that I will make again. Thanks for sharing!

Salmon Mac and Cheese

Reviewed: Mar. 9, 2009
This is very tasty. I used frozen veggies for personal preference. Since my husband cannot eat fish, I divided the recipe into two 9" square pans. One I made with the salmon as the recipe called for. The other I used leftover rotisserie chicken and some southwestern seasoning. I reduced the cooking time since the recipe was divided. Very, very good Pixie...thanks for sharing!!

Oven Brown Rice

Reviewed: Mar. 7, 2009
I made this in the crockpot. It turned out a little crispy, but that should be solved with a little stir every now and then. Since other reviewers complained about the salt, I used minced garlic instead of garlic salt, and decreased the season salt a little. The overall flavor was very good and I will make again. Thanks for sharing.

Taco Seasoning I

I recently made this when I went to prepare tacos and didn't have any seasoning. Fantastic. This was the first time in a while I impressed my husband. He couldn't believe I made taco seasoning myself....I didn't bother to tell him how easy it was...sssshhh! Thanks for sharing.

Green Bean Stir-Fry

Reviewed: Mar. 7, 2009
This is the best and I hate green beans. Made the recipe as stated and will probably make again tonite. Thank your for sharing!!! UPDATE: Last time I made these, I parboiled them for 1-2 minutes...dryed them off and stir fryed as directed. It seemed to speed up the stir fry time. Thanks again....delicious!

Brazilian White Rice

Reviewed: Mar. 4, 2009
I took advice of other reviewers and used chicken broth instead of water. My chicken broth was NOT low sodium, so when I added the salt, it became a little too salty for my tastes. I will make this again as beyond my mistake it has a very good flavor. Thank you for sharing!!

Very good marinade. I liked the balance between the tangy dressing and the sweet brown sugar. I used boneless skinless chicken breasts and they came out tender and juicy. Thanks for sharing.

Whole White Wheat and Honey Chocolate Chip Cookies

Reviewed: Mar. 4, 2009
Thank you!! I was looking for a healthier alternative to the regular desserts filled with sugar, butter, and white flour. I have found it. I substituted the butter with Sunsweet Lighter Bake and used whole wheat flour as that was what I had. Yummy. Thank you so much for sharing!!

Roast Sticky Chicken-Rotisserie Style

Delicious and easy. Made as directed, except I only made one chicken so I just halved everything. I also put some of the sesaoning under the skin of the chicken to add a little more flavor. Thanks for sharing, I will be making this again and again.

Very good. I did reduce the oil as suggested by another poster and added toasted almonds and sesame seeds for crunch. Quick and easy recipe that will work perfect for those busy nights. Thanks for sharing.

Sweet and Sour Chicken I

Reviewed: Feb. 26, 2009
This was excellent! I am a vegetarian, so I used tofu instead of chicken. The breading of the tofu was a bit messy but worth it. I often miss the crunch of fried food and this really hit the spot. I added baking powder to all purpose flour instead of using self rising. I served it with fried rice, a great recipe for making take out at home (and it really is just as good!).

Todd's Famous Blueberry Pancakes

Reviewed: Feb. 20, 2009
Yummy! I used 1/2 c almond flour and 3/4 c ap flour. I substituted almond milk for regular milk. Unfortunately I didn't have an hour to wait, so after 30 minutes I put them on the griddle. They smelled wonderful and tasted better! Next time I will add the blueberries while they are on the griddle instead of in the mix. My only complaint is that the recipe says it makes six servings, but I only got 13 smaller sized pancakes. Easy to fix, I'll just double it next time. Thanks for sharing.

Peanut Mallow Bars

Reviewed: Feb. 16, 2009
I was looking for a bar cookie recipe that didn't have chocolate. This certainly fit the bill. I had trouble spreading the batter for the crust as it was very thick, but otherwise the cookie bars were very quick and easy to make. I did use 1/3 cup of honey as I ran out of corn syrup. Everyone loved them and I will definately be making these again. Thanks for sharing!!!
