Pumpkin Turkey Chili

The idea is a 5-star recipe ... it's full of fiber and lean protein. I gave it 4 stars because I had to suit it to my taste. My secret to making it perfect was adding milk. I loosely followed one of the other reviews and added a can of corn, a can of black beans, another can of tomatoes, a can of chicken broth, a couple Tbsp of honey, cilantro, cumin, and pumpkin pie spice. It was still just a little "off". So I added a big pinch of kosher salt and about a half cup of whole milk. The whole milk did it. It helped take it from a thick pumkin-y taste to a creamy & yummy taste. Even my husband liked it.

Smokin' Scovilles Turkey Chili

First, I gave it four stars because I didn't make it exactly as-is. I adapted it according to the ingredients I had on hand. I left out the peppers, cumin, liquid smoke and hot pepper sauce. I substituted the turkey for beef, Worcestershire sauce for steak sauce, and the tomato sauce for tomato paste, but added more beer. The result was delicious! I let it refrigerate overnight, which I think helped the flavors blend together and keep the corn from tasting like, well, corn. The hubby raved, and he doesn't usually have much to say about my cooking. Will definitely use this (adapted) recipe again!

Slow Cooker Chicken Stroganoff

This was pretty good, although a little too salty for some reason (and I didn't add an extra salt). Nice, easy, comforting chicken. Although it has to be made on a weekend, because the 5-6 hour cook time isn't feasible on a work day, sadly.

Downeast Maine Pumpkin Bread

A ton of people have rated this and I'll just add another positive review. Really easy and delicious. As others, I used some brown sugar in place of some of the white sugar. I also doubled all the spices. I had a little trouble with the baking time. I baked it in a bundt pan, on convection bake and it took ALOT longer than 50 minutes. I actually lost count, but I would say at least an extra 15-20 minutes. It definitely gets better as it ages!

J.P.'s Big Daddy Biscuits

Oh dear. This recipe didn't work out for me at all. Not exactly sure what I did wrong (I try to follow recipes exactly), but the biscuits turned out thin and dry, and within a few hours closely resembled hockey pucks. I'm giving it 3 stars because there's every possibility I screwed something up and the actual recipe is just fine.

Quinoa and Black Beans

Creamy Frosting

Great tasting, creamy frosting. Recipe does not yield enough to cover and fill a two layer 9" cake. Does not hold up well for extensive piping (esp. if you have "hot hands".) When cooling flour/milk mixture be sure to place plastic wrap directly on top or it will form a skin that WILL NOT beat out.

Boilermaker Tailgate Chili

After cooking this for 3 days - it's 5 star. The first day - it was ok, kind of thin - 2nd day - tastier and a little thicker - by the third day it is amazing! Thick, hearty and VERY tasty - although I think it could have been a bit spicier. I made it for a Halloween party (I started cooking it 2 days before) and did a little chili buffet - set out some bowls and a platter of sour cream, fresh chives, cheese, and a plate of hotdogs - people could have what they preferred - but no matter what they chose they really enjoyed this chili - and so did I. I left out one can of beans and added a little extra meat and i used real bacon - other than that I followed the recipe exactly. I will definitely be making this again. Thank you. :)

Artichoke and Roasted Red Pepper Dip

This was just ok for me. Kind of bland - so I added garlic and pepper. It was pretty greasy - even after patting down the peppers and hearts with paper towels. I made it for a Halloween party and it was one of the few things leftover. I doubt it will go into my regular rotation - but maybe with some tweaking it could be better.

Mini Ham And Cheese Rolls

These were tasty - I added some pepperoni, roasted red peppers and fresh spinach leaves to the sandwiches - and I used provolone cheese. I also added garlic to the butter mix. Made 2 dozen for a Halloween party and they were gone in a flash! Thanks for the great start - the changes I threw in made these even better!

Ninety Minute Cinnamon Rolls

Very good and fast for a risen dough. Texture was bread-like. I topped them with cream cheese, butter, sugar and fresh vanilla bean icing. They were delicious!
