Mom's Meat Loaf

This was great. Only thing I changed was to use Stove Top Turkey Stuffing left over from Turkey Day for the breading. Came out really moist and I'll probably never make it any other way from now on.

Microwave Oven Peanut Brittle

This came out a lot darker than the picture but that's probably because I threw everything in all at once except for the baking soda. Opps. Also, didn't have nuts so used a half cup of peanut butter. Tastes good though and my dog likes it too.

Delicious Ham and Potato Soup

Very Good. I also added about a cup of cheddar cheese. The only thing I would change is reducing the amount of liquid the potatoes boil in as I prefer a thicker soup. But overall this is a great recipe.

Eggless Ginger Cookies

Pretty good. I baked them for 7 minutes. I didn't roll them out, just spooned on to sheet and flattened with a glass. Not as pretty as the picture but not bad tasting at all.

Burgundy Pork Tenderloin

This recipe was marigal for my family. I would use less wine definately but the pork did have a very rich taste and was very tender. Not sure I willl make this again.

Raspberry Lemon Muffins

As another reviewer stated, I too had problems with the batter and had to mix in 2-3 tablespoons of milk to get it to the right consistency. I used leomn yogurt instead of the plain and loved the lemony taste of these muffins. I didn't feel the raspberries added to the flavor, but rather took away. I will make this recipe again without them.

Raspberry Almond Coffeecake

Gramma and Grampa loved it! I used walnuts instead of almonds out of personal prefrence, and I also doubled the amount of batter. I used a springform pan and it came out wonderfully!

Scalloped Potatoes and Onions

I used some 2% sharp cheese and some Tuscan spices a friend of mine gave me for the seasonings. Did microwave it for 10 minutes before I added the sauce and threw it in the oven. Smells devine and I'm almost sure it tastes as good. Oh yes, added some seasoned bread crumbs to the top before I put it in the oven. Will cook it for an hour at 325 and check it and decide from there how much longer to cook it. Ok, Max, my dog, wants out and is licking my leg. Gotta go. Enjoy.

Kickin' Collard Greens

I sort of incorporated another recipe for Drunken Greens into this one and had rave reviews from my neighbors and friends. I added more bacon and 1 btl of dark beer and cut back on the chicken broth. Used fresh mustard greens. Only put 1 Tbl of brown sugar in and otherwise followed the recipe. Outstanding.
