Awesome Carrot Cake with Cream Cheese Frosting

This is a tasty recipe, but it uses way to much oil. Cut the oil in half and add some buttermilk or yogurt to replace the moisture loss. Good otherwise.

Gramma's Apple Bread Pudding

This bread pudding is WONDERFUL!! It is exactly like the Apple Bread Pudding from my favorite restaurant! I just double the warm vanilla sauce and try not to eat the whole pan! I have used homemade bread and it makes it even better, if thats possible. Great recipe!

Chocolate Chip Banana Muffins

The recipe was great! I follewed the idea of using applesauce as a replacement for half of the oil and ended up adding more applesauce at the end when the mixture wasn't stirring very well, it worked really well. my recipe made enough for a tin of 12 regular sized muffins and 12 mini-muffins.

Nany's White Cake

This is a dense cake. It's supposed to be. If you want a lighter cake, use cake flour. The ratio is 1 cup and 2 tablespoons of cake flour to every 1 cup of AP flour. I've made this cake both ways and have even mixed the flours. I liked mixed the best. I also add 1/2 teaspoon more vanilla extract because I like it that way. This is a very good recipe. Thanks for sharing it.

Crazy Crust Pizza Dough

I have to say that in a pinch, I liked this recipe. Is it the "Best"? No, but in a pinch it was just fine. As far the those that complain about the dough sticking to the pan, try parchment paper. It works great. No muss no fuss.

Butter Cream Frosting II

I made this dairy-free for my daughter who is on a dairy-free (and soy-free and gluten-free) diet. Use Fleischmann's UNSALTED margarine which is made from corn oil--contains no dairy or soy. You can use rice or other non-dairy "milk" for the milk.

Italian Meatball Sandwich Casserole

I followed the recipe as stated, subbing frozen meatballs, light mayo, and omitting the garlic. Next time I would add the garlic to the mayo/cream cheese mixture and would let the bread dry out overnight or lightly toast it first. Hubby really liked it!

Slow Cooker Chicken Cacciatore

This was OK. Benefitted from the addition of some herbs such as basil or oregano. Sauce was kind of thin...next time I would substitute something thicker like seasoned crushed or diced tomtatoes. Put the chicken breasts in frozen and it came out fine!

Pumpkin Fudge

Mmmmm! First time making pumkpin fudge. A nice change from chocolate and peanut butter. I doubled the recipe with no problems. Use a candy thermometer to ensure that your fudge reaches the soft ball stage (232°F). I also recommend a wisk for combining the ingredients and stirring in the pumpkin, marshmallow creme and chocolate.

Basic Ham and Bean Soup

Here's a tip: do not add the salt until after you have finished cooking the soup. Cooking beans in salt results in a less than tender bean. You may also find that adding the salt at the end will also decrease the cooking time for this recipe.
