Parmesan Broccoli Balls

we make this recipe many times a year, but we use 10 oz. spinach, cooked a few mins. then drained and squeezed dry. We only use 2 eggs if large, 3 if smaller, and 1/2 c. margarine, and use garlic powder since the stuffing mix is already seasoned. We found it gets too mushy and greasy to work with, and this also cuts out more of the fat and cholesterol. Very good recipe after the changes.

Easiest Peanut Butter Fudge

I make this all the time, but use 1/4 c. butter or margarine, 1/3 c. light karo syrup and 4 c. confectioners sugar. It is sweet enough without adding more brown sugar. Just smash it all together and pat down in an 8" by 8" pan. No cooking, and so easy, can even add some crushed peanuts or even use crunchy peanut butter. Still need the 1 t. vanilla, and can even add a dash of salt if desired. Easy and delish.

German Chocolate Cake III

Got RAVED reviews at Thanksgiving today!!! This cake is the exact recipe on the back of the Baker's german chocolate box, but this is the filling recipe on the back of the box. I recommend you use it as it makes for more (quite enough) filling: 4 egg yolks 1 can (12 oz.) evaporated milk 1-1/2 tsp. vanilla 1-1/2 cups sugar 3/4 cup (1-1/2 sticks) butter or margarine 1 pkg. (7 oz.) BAKER'S ANGEL FLAKE Coconut (about 2-2/3 cups) 1-1/2 cups PLANTERS Chopped Pecans

Old Fashioned Coconut Cream Pie

I didn't put any whipped topping or toasted coconut on top. I doubled the recipe--cooked it all at once (as directed) in a big pot on the stove. I used 1/4 cup cornstarch and 1/2 cup flour mixed as the thickening. I happened to have a can of coconut milk and a can of coconut sugar on hand. I used about 2 cups coconut milk, 2 and 1/2 cups of 2% milk and 1 and 1/2 cups of heavy whipping cream (remember, I doubled the recipe). I used 2 cups of coconut sugar. Followed everything else to a "T"! Perfect. People who don't like coconut very much and my husband who normally doen't go for cream pies when there is other stuff around (I made this in addition to about 5 other desserts for thanksgiving) LOVED it. I think the coconut milk and sugar really added to the over all "coconuttyness." ENJOY!

Cookies 'n' Cream Fudge

this is amazing fudge & foolproof regardless of reviews here... which i always read for all the gr8 help i get & saving myself many failures!!! i've made at least 15 batches of this & never a soft batch!!!! it has become one of the things my family insists doesn't get replaced when i do my Christmas baking for friends & family, something in our clan i'm famous for!!! i use holiday oreos & make sure to break by HAND & don't STIR in the cookies!!! JUST FOLLOW THE RECIPE!!!... then just press top cookies into fudge so u don't lose alot of them when cutting!!! those who reported soft fudge i'm sure when they do again they won't have a problem...might not have made quite hot enuff??

Libby's® Pumpkin Cranberry Bread

Made as is; however, I did not have pumpkin pie spice. Called sis and she said her bottle of pumpkin pie spice contained cinnamon, ginger, and nutmeg. So I used 3 t. cinnamon, 1 1/4 t. ginger, and 3/4 t. of nutmeg. Turned out wonderful!!!

Kellogg's® Chocolate Scotcheroos

If you find these too sweet, you can omit the corn syrp and sugar altogether. You can simply microwave the PB and butterscotch chips together, stirring until smooth. Then do the same with the choc chips (I suggest semi-sweet) and top them. I used to do it this way to make them on my lunch break at work. I like to eat them warm with a spoon :)

Leek and Fennel Soup

I made this soup, but I added more potatoes, and a bit of half and half and sprinkled some Parmesan cheese to thicken it. Also, I put about 1/2 of the soup into a blender to thicken the broth. Just a personal preference for a creamier version.

This dish was fantastic. I can't speak to its authenticity, but it was delicious and that's pretty much what counts for me. I found the spiciness just right and I think it clearly lends itself well to variation, which is always nice. The only super minor change that I made from the directions was to sautee the carrots with the onions because I wanted to make sure they got soft because my husband isn't a fan of carrots, so if I can hide their texture he doesn't mind. Clearly though, doesn't really effect the dish overall. Loved it!

Potato and Bean Enchiladas

Delicious. I did, as some mentioned, add sauce to the inside of the enchiladas. I also added a jalapeno and a green tomato to my sauce and a little vinegar. It was really great.

Swiss Chard with Pinto Beans and Goat Cheese

As previously recommended I switched the pinto beans for black beans. I went a little heavier on the red pepper flakes because my husband and I like a lot of heat. It was absolutely delicious. I served it over basmati rice, I loved it. I didn't put it in the oven as directed. I thought that was a bit unnecessary. In a hot pan you can just stir the goat cheese around and it melts just fine.

Best Brownies

I wanted to try something different. I will stick to my recipe from the betty crocker cookbook from now on. This one is more cake like and doesn't have the same chewy texture I've come to love. The frosting, however, I had no problems with, but I did not put honey in it. I decided against putting the honey in because I usually don't prefer the taste of honey (almost sickening sweet) in dressings and frosting and such (I do, however love honey in herbal tea and wholewheat baked goods, just so you know). I ended up doubling the recipe and added 2T. of milk (one for each recipe). Good icing; not too sweet that way. I think I'll put it one my favorite stand-by brownie recipe next time.

S'mores Crumb Bars

I've made these a few times now. I've messed around with all crumbs on bottom, using milk chocolate chips, using more butter...basically trying some of the most popular suggestions. Our favorite? AS WRITTEN! also: SOMETHING I JUST DISCOVERED: I made these last weekend for a family gathering. I used pre-crushed graham crackers I bought from the store. BIG MISTAKE! I saw where a lot of reviewers were having problems with dryness/not-sweet-enough-ness. Every time I make these with graham crackers I crush myself and use the amount of butter and sugar called for, they are SUPERB. But this time the crust did not hold together and it was not sweet enough. Down right "yucky" compared to the normal turn out. I learned my lesson! No more pre-crushed graham crackers for me.

wow!!! delicious!!! i added 1/4 cup extra butter to the crust to make it stay together a lil better and other than that this recipe is perfect as is and needs no changes! if u love almond joy just us milk chips and add a lil chopped almonds in chocolate and there u go! sometimes u feel like a nut sometimes u don't!! lol!!! enjoy!!
