Easy Mini Quiches

These are good, but definitely not quiche. They're more like mini muffins with the amount of buttermilk baking mix called for in the recipe. Even after using four eggs and half the amount of baking mix they were still a little too "puffy" but they were still good. I used cheddar cheese and did half with bacon and half with ham. I guess I'll be searching another mini quiche recipe.......

Leek and Onion Vegetable Dip

This is a nice change from regualr onion dip. I used Knorr leek soup mix, lite sour cream and lite mayo. I chilled it overnight and served it with baby carrots, sliced cucumbers, cherry tomatoes, celery, and assorted crackers.

Sausage Cheese Balls

Very good appetizer - I followed the recipe exactly. I used light cheese and there was no difference. I might add a little tabasco to the mix next time or use hot sausage to give these a little kick.

Golden Sweet Cornbread

Awesome cornbread! I used melted butter instead of oil and lowfat buttermilk vs. milk. It was light, fluffy and went great with ribs and the left overs were great for breakfast.

Baked Beans I

These aren't bad, but my grandmother always did hers with molasses and for some reason that has always made a huge difference whether you're using canned beans or you're starting from scratch.

Orange-Mustard Grilled Chicken

This is not the best marinade I've done on this site, and I've done a lot of them. Even after 8 hours, there was just a faint hint of orange flavor. I didn't have minced gingerroot, so I used powdered ginger (1 tsp.) and added 2 Tbsp. of olive oil. The chicken was tender and would be good cut into strips over mixed greens with a citrus vinaigrette - that's the plan for the leftovers.

Herbed Citrus Chicken

Very good and very easy - I used lime juice and olive oil. I cut the seasoned salt down to 1/2 tsp. and used minced garlic from the jar vs. garlic powder. I also added 1/4 cup of orange juice to give it more of a citrus flavor. I pounded the chicken down thin and let it marinate all day. It turned out very moist and tender.

Egg Salad I

I used half the amount of dried dill and even though I love dill, I just didn't care for it in this salad. I used 1/4 c. of red onion and 1/4 c. of chopped celery for a little more crunch. I used 1 Tbsp. of dijon and added more mayo. I also used half the amount of paprika. I usually just sprinkle a bit on before serving. I don't think I'll make this one again.

The crust definitely needs about two to three times more butter to make it crusty. I was so afraid to overmix my batter because of all the warnings against it, that I must not have mixed it enough and it didn't set in the middle. I cooked it for an hour at 350 and let it sit in the closed oven for 5 hours, then chilled it, and it still was gooey in the middle. AND it cracked! I'm going to try it again to see if I can make it better.***EDIT***I chilled it for a full 24 hours and it was like a different cake. Besides the crust needing more butter, this was PERFECT! I also took about 3/4 cup of the batter out and added melted chocolate to swirl through. It looked wonderful (except the cracks) and tasted amazing!

Turkey Burgers

I left out the water and the salt, as there is enough salt in the onion soup mix. I added 1 Tbsp. of lite soy sauce and a little garlic powder and let the patties rest for a half hour after making them. These went great on multi-grain rolls.

I can't believe I found this on allrecipes! My Dad used to make these for me and my cousins at my Grandma's house and we used to feel so grown up. What a great memory! Now I can serve it at my house.

Marinated Grilled Chicken II

This is a good marinade when you're short on time. I used light italian dressing (half the bottle), added some fresh lemon juice, cracked black pepper, and some lemon zest along with fresh rosemary.

World's Best Pasta Sauce!

Awesome meat sauce!!! I sauteed the beef and sausage separately as they tend to be greasy and added them to the sauce during the last half hour of cooking. I then sauteed the onion with a little olive oil and garlic until translucent. I then added the tomatoes and spices. I used red wine vs. water, added 1/4 tsp. of red pepper flakes, doubled the basil, added 2 tsp. of oregano, and 1 bay leaf. The fennel seeds are a nice touch! This sauce was so good and tasted even better the next day.

Great Garlic Bread

Very good - I used minced garlic from the jar vs. garlic powder, half the amount of parsley, and added 1 tsp. of dried oregano. Instead of melting the butter, I let it soften and formed a paste. I spread that over the bread. I used parmesan and put it under the broiler for a couple of minutes to make it nice and crispy.

Red Cabbage With Apricots And Balsamic Vinegar

I made these for lunch today to go with tomato soup. I added 1 tsp. of garlic powder, 1 tsp. of crushed rosemary and 1 tsp. of italian seasoning and they came out great. These are so simple!

Simple Delicious Pasta Sauce

I only used 2 garlic cloves, and added Italian seasoning as others suggested. I also used a potato masher to break the tomatoes down into more of a saucy consistency. I added a little chicken broth and reduced the sauce to make it thicker, and threw in a little sugar because I like a sweeter sauce. It was delicious!
